Position Summary:
The AYA Rooftop Restaurant Gourmet Cook is responsible for preparing high-quality, visually appealingdishes using fresh, premium ingredients in accordance with established recipes and presentationstandards. This role requires creativity, attention to detail, and a strong understanding of advanced culinarytechniques to deliver an exceptional dining experience. The Gourmet Cook ensures all food is preparedsafely and efficiently, maintains cleanliness and organization in the kitchen, and collaborates closely withthe culinary team to develop and refine menu offerings. A commitment to excellence and consistency isessential in this position.
Essential Functions:
1. Responsible for redefining hospitality at Graton Resort & Casino while living, supporting, and promotingour values.
2. Perform responsibilities in accordance with all Company standards, policies, and procedures.
3. Prepare and cook high-quality dishes following standardized recipes and presentation standards.
4. Maintain consistency in taste, quality, and appearance across all menu items.
5. Follow all food safety, sanitation, and kitchen procedures.
6. Keep workstations clean, organized, and properly stocked during service.
7. Communicate effectively to coordinate pick-ups with fellow culinary Team Members.
8. Minimize waste through proper preparation, storage, and portion control.
9. Exhibit knowledge, understanding, and application of various cooking techniques.
10. Operate all required kitchen equipment, including but not limited to, slicer, steamer, deep fryer, ovens,stove, broiler, grill, mixer, kettle, and flat top.
11. Maintain a high level of personal grooming and uniform standards.
12. Treat each Team Member with care, dignity, fairness, and respect in a professional manner whiledisplaying and encouraging teamwork in the department.

Required Qualifications:
1. Ability to communicate effectively with Guests, Team Members, and Management in both written andverbal form.
2. Minimum of three (3) years of culinary experience required.
3. Demonstrated proficiency with all required knife skills and cooking techniques via a test administeredby a GRC Chef.
4. Ability to identify standard kitchen equipment and ingredients.
5. Working knowledge of weights, measures, and various cooking techniques.
6. Ability to read, understand, follow, and execute standardized recipes.
7. Ability to manage time effectively with minimal supervision.
8. Must possess or obtain a California Food Handlers Certification.
9. Ability to handle a flexible work schedule, working weekends, holidays, and all shifts.
