Fine Dining Server / Hospitality Host

Company: 1033 Omakase & Sake Bar

Location: Walker’s Point — Milwaukee, WI

Position Type: Part-Time / Full-Time

Experience Level: Mid-to-Senior (Fine Dining/Premium Sushi experience heavily preferred)

About 1033 Omakase

Awarded Best New Restaurant and recognized on the highest stages of culinary excellence, 1033 Omakase is an intimate, 10-seat counter experience where culinary artistry meets urban edge. Guided by the philosophy of "less is more," we curate a meticulously paced, 14-course journey featuring the finest seasonal ingredients and an exceptional sake program. At 1033, hospitality is a performance—fluid, attentive, and deeply personal. We are looking for an exceptional Server/Host who can seamlessly bridge the gap between our culinary team and our guests, elevating "the art of a dining experience."

The Role

As a Server at 1033 Omakase, your role goes far beyond taking orders. You are a curator of the evening's vibe and an essential storyteller. Working in tight synchronization with Chef Ray and the culinary team, you will guide guests through their multi-course journey, manage premium beverage pairings, and ensure flawless, unobtrusive service from the moment guests arrive for their pre-dinner experience to their final farewell.

Because of our intimate footprint, your attention to detail, emotional intelligence, and ability to read the room must be absolute.

Key Responsibilities
  • Immersive Storytelling: Maintain a deep, fluid knowledge of our rotating 14-course menu, seasonal fish profiles, traditional Japanese techniques, and sake/wine pairings. Artfully articulate these details to guests to enrich their dining experience.

  • Synchronized Service & Pacing: Orchestrate flawless step-and-repeat table service, clearing, and resetting in perfect rhythm with the chefs' preparation at the counter. Punctuality is critical; executing service perfectly on time is essential to maintaining the strict rhythm of our seatings.

  • Beverage Execution: Present, pour, and explain premium sake flights, curated wine pairings, and artisanal cocktails with proper fine-dining technique.

  • Guest Management & Arrival Experience: Welcome guests warmly as they arrive, managing the pacing of pre-dinner drinks and creating a smooth transition to the tasting counter.

  • Anticipatory Hospitality: Read guests’ needs intuitively—ensuring water glasses are filled, dropped napkins are replaced instantly, and guest preferences are noted for future visits, all without disrupting the flow of the counter.

  • Collaboration: Maintain strict, professional communication with the culinary leads to ensure dietary restrictions are handled safely and seamless pacing is maintained across every seating. Must be able to follow precise instructions from the culinary team without deviation.

Qualifications & Requirements
  • Experience: 2+ years of high-volume upscale casual or fine-dining service experience. Background in high-end sushi, omakase concepts, or strict tasting-menu environments is highly preferred.

  • Mental Agility & Learning: Must be a fast learner with an excellent memory. You will need to quickly memorize rapidly changing daily menus, complex ingredient origins, and specific guest preferences.

  • Stress Management: Proven ability to manage stress effectively and maintain a calm, poised, and professional demeanor in a high-stakes, intimate environment where you are always in full view of the guest.

  • Punctuality: Impeccable time management skills. Being reliably on time for all shifts is a non-negotiable requirement for this role.

  • Coachability: Exceptional ability to listen, accept constructive feedback, and follow exact standard operating procedures and leadership instructions.

  • Beverage Knowledge: Strong foundational knowledge of sake categories (Junmai, Ginjo, Daiginjo), wine service, and premium spirits.

  • Availability: Must have open flexibility for evening shifts, including weekends (Wednesday through Saturday operational hours).

  • Credentials: Valid local food handler and alcohol service certifications (TIPS/ServSafe).
