COOK / CULINARY STAFF

1st/2nd/3rd shift (breakfast, lunch, dinner, snacks) 

Position Summary 

Prepares meals for persons served in accordance with the approved 2-week rotating menu, DOH regulations (410 IAC 7-26), FDA Food Code, and ARISE kitchen safety standards. 

Required Qualifications: 

  • Food handler certification per 410 IAC 7-22 
  • CFPM credential preferred (ServSafe or equivalent) 
  • Experience in commercial food preparation 
  • Knowledge of food safety, sanitation, and allergen management 

Pre-Employment Requirements: 

  • Drug test at Hancock Gateway Lab 
  • Criminal background check must clear before first day 
  • OIG LEIE screening 
  • TB skin test or proof within past year 
  • Immunizations per  

Job Responsibilities (derived from ARISE policies): 

  • Prepare breakfast, lunch, dinner, and snacks per the RD-approved 2-week rotating menu 
  • Follow all cooking temperature requirements per FDA Food Code 
  • Monitor and log temperatures for refrigeration, freezers, hot holding, and cooking 
  • Practice proper food storage hierarchy and FIFO rotation 
  • Execute two-stage cooling method for TCS foods  
  • Prevent cross-contamination using color-coded cutting boards and proper procedures 
  • Manage allergen identification, communication, and cross-contact prevention  
  • Perform handwashing per CDC guidelines at required intervals  
  • Clean and sanitize using three-compartment sink method 
  • Report illness symptoms to PIC before beginning work  
  • Maintain date marking and labeling on all stored foods 
  • Support biweekly kitchen inspection 
  • Maintain food handler certification and any required CE
