Job description

Palma Restaurant is seeking a talented and passionate Assistant Pastry Cook with experience in baking to join our team. The Assistant Pastry Cook will collaborate closely with our team to create and execute an exceptional pastry and breads program that reflects the essence of Italian cuisine while delighting our guests. This is an exciting opportunity for a dedicated pastry professional to contribute to the success of a beloved neighborhood restaurant. This position is for primarily daytime preparation but will also require cross-training in evening service.
Duties:
  • Daily preparation of focaccia, including mixing, bulk fermenting, proofing, and baking
  • Accurately completes food preparation tasks, including mixing, baking, portioning, and assembling various plated dessert components (including cheesecake, tiramisu, mousse, choux pastry, gelato/sorbet, cookies, cakes, creams, and custards)
  • Plates desserts according to tickets during service
  • Maintains cleanliness and organization of pastry station
  • Collaborates with Pastry Supervisor and Executive Chef in menu planning and specials development

Requirements:
  • Arrives to each shift on time and in appropriate kitchen attire
  • Ability to read and follow a written recipe
  • Practices general hygiene and has knowledge of/practices NYC food sanitation standards
  • Safe handling of allergens to prevent cross-contamination
  • Ability to scale a recipe up or down to meet restaurant needs
  • Strong attention to detail
  • Enthusiasm to learn and grow within a close-knit team
  • Ability to work both independently and within a team
  • Familiar with pastry terminology, techniques, and basic item preparation
  • Fluent in English (Spanish is a plus)
  • Ability to decorate a simple cake
Typical Hours:
Tuesday 9am-3pm
Wednesday-Saturday 7:00am-3:30pm
