ADVENTHEALTH TRAINING CENTER

Legends is the official hospitality partner of the AdventHealth Training Center, home to the Tampa Bay Buccaneers. The partnership includes overseeing the food and beverage program development and management for player nutrition, training camp operations, corporate hospitality, special events, and all food and beverage related activations at the facility. PRIMARY RESPONSIBILITIES
  • Menu, Recipe & Documentation Management Maintain and organize recipe databases, menu files, standard operating procedures (SOPs), Banquet Event Orders (BEOs), event packets, calendars, and departmental files for both culinary and catering operations. Assist with menu development, formatting, distribution, and preparation of BEOs and operational packets for daily operations, training camp, player meals, and special events. Manage departmental correspondence, meeting agendas, and administrative projects as assigned.
  • Purchasing, Inventory & Cost Control Coordinate purchasing requests, vendor communications, supply orders (including linen, boxed lunches, and operational supplies), invoices, and inventory documentation. Maintain accurate digital inventory records, including post-event inventory entry, reconciliation, and end-of-month counts and reporting. Assist with receiving and verifying warehouse and vendor deliveries while maintaining organized inventory records. Prepare reports on food costs, labor metrics, inventory levels, and operational performance.
  • Scheduling, Onboarding & Team Support Support scheduling, payroll documentation, and employee records for culinary and catering team members. Coordinate onboarding paperwork, uniform issuance, orientation, and training documentation for new culinary and catering employees. Communicate event updates, schedule changes, and operational information to internal departments in a clear and timely manner.
  • Event Logistics, Floor & Operational Support Coordinate logistics for catering functions, banquets, training camp hospitality, and special events, including event diagrams, staffing documents, and operational packets. Provide floor and operational support during events and training camp by assisting with setup/breakdown coordination, responding to administrative and operational needs, and supporting catering and culinary leadership on site. Assist with vendor and rental coordination as needed for events. Serve as a liaison between culinary operations, catering, facilities, human resources, and other departments to ensure smooth execution.
  • Compliance & Workplace Standards Ensure compliance with food safety regulations, company policies, and health department requirements. Maintain organization and cleanliness of administrative offices and storage areas. Assist with special projects and other duties as assigned based on business needs.
QUALIFICATIONS
  • Associate or bachelor's degree preferred.
  • Previous administrative experience in hospitality, culinary operations, catering, food and beverage, sports, or event management preferred.
  • Experience working in a fast-paced hospitality, sports, or training facility environment is preferred.
  • Proficiency in Microsoft Office Suite (Excel, Word, Outlook, PowerPoint); experience with scheduling, inventory, or event management software is a plus.
  • Strong organizational, time management, multitasking, and attention-to-detail skills.
  • Excellent written, verbal, and interpersonal communication skills.
  • Ability to manage multiple priorities and meet deadlines in a dynamic environment.
  • Understanding of culinary terminology, menu development, food cost controls, and banquet/event operations preferred.
  • Strong analytical and problem-solving abilities with a customer-service and team-first mindset.
  • Ability to maintain confidentiality regarding personnel and financial information.
  • Must be available to work flexible hours, including evenings, weekends, holidays, training camp periods, and special events at the AdventHealth Training Center.
  • Food safety certification preferred or ability to obtain.
  • Bilingual is a plus.
KNOWLEDGE, SKILLS & ABILITIES

Ability to work collaboratively across culinary, catering, facilities, and administrative teams. Comfortable supporting both office-based administrative work and on-floor operational needs during events and training camp. Strong initiative and ability to identify operational needs and support leadership in resolving them. Proficiency in English (read, speak, write); additional languages valued.

PHYSICAL REQUIREMENTS

Ability to work in both office and culinary/event environments. Prolonged periods of sitting, standing, walking, and computer work. Ability to occasionally lift, push, or pull up to 25–50 pounds as needed for event support. Ability to walk through kitchen, training, and event spaces; occasional bending, reaching, and standing for extended periods during events. Must be able to perform the essential functions of the role with or without reasonable accommodation.

WORK ENVIRONMENT

This position operates in both office and food service / event environments and may require exposure to varying temperatures, kitchen equipment, and busy operational settings during training camp and special events. Location is on-site at the AdventHealth Training Center. Must follow and promote all company safety policies and procedures, including completion of required safety training. Report all safety incidents in accordance with company protocols.
