B&G’S PIZZA CHEF JOB DESCRIPTION


Bub and Grandma's Pizza is seeking an experienced Chef to help lead our high-volume pizza restaurant. This position is ideal for a chef with a strong operational background, exceptional organizational skills, and significant experience in high-volume pizza production.


The ideal candidate has experience working in fast-paced, high-output kitchens where consistency, efficiency, and quality are critical. They are a thoughtful communicator, a hands-on leader, and someone who enjoys building systems, training teams, and continuously improving operations.


Working closely with ownership, culinary leadership, the Chef will help refine recipes and production systems, oversee kitchen operations, build and develop the back-of-house team, and ensure the restaurant is positioned for long-term success.


Time Expectations:

  • 5 days per week
  • Approximately 10 hours per day
  • Participate in training, administrative duties, weekly management meetings, and operational planning
  • Respond to time-sensitive operational communications via Slack and email during working days
  • Provide occasional support on days off when necessary to ensure continuity of operations

Key Responsibilities

Kitchen Leadership & Staffing:

  • Assist in recruiting, interviewing, hiring, and onboarding kitchen staff
  • Help build a positive, collaborative, and accountable kitchen culture
  • Train, coach, and develop team members to maintain consistency and performance standards
  • Conduct regular performance discussions and provide ongoing feedback
  • Create training materials and standard operating procedures
  • Support disciplinary actions and performance management when necessary
  • Lead by example through professionalism, urgency, and teamwork

Operations & Administration:

  • Maintain accurate recipes, prep procedures, production guides, and allergen information
  • Create and maintain food cost worksheets and menu costing documents
  • Monitor vendor pricing and identify opportunities for cost savings
  • Manage inventory systems, including SKU management, product categorization, and period inventory counts
  • Coordinate vendor relationships, ordering, and receiving procedures
  • Monitor labor usage and scheduling to support operational and financial goals
  • Participate in weekly management meetings and periodic financial reviews
  • Communicate operational updates and changes clearly across the team
  • Coordinate maintenance and repair needs within the kitchen

Culinary Operations:

  • Lead daily production and service operations
  • Ensure food quality, consistency, and execution standards are maintained at all times
  • Oversee prep lists, ordering, receiving, storage, labeling, and product rotation (FIFO)
  • Support the team during service by troubleshooting issues and maintaining standards
  • Train staff on recipes, production methods, and service procedures
  • Ensure compliance with all food safety, sanitation, health, labor, and workplace safety regulations
  • Maintain required records and documentation, including sanitation logs, allergen protocols, and food safety programs
  • Collaborate closely with front-of-house leadership to ensure smooth service and guest satisfaction
  • Fill operational gaps as needed to support business needs

Pizza Production and Systems:

  • Refine and adapt recipes and production methods for high-volume execution
  • Develop systems that maximize throughput while maintaining quality standards
  • Establish dough, sauce, topping, prep, and baking procedures that support consistency and efficiency
  • Analyze production flow and identify opportunities to improve speed, organization, and labor utilization
  • As needed, assist in equipment planning, station design, and workflow optimization
  • Ensure quality standards are maintained from prep through final product execution

Menu Development & Growth:

  • Collaborate on menu development, seasonal offerings, specials, and future menu initiatives

Qualifications:
