Join the Culinary Team at One of Hawaii's Most Iconic Dining Destinations

Spago Maui is seeking a talented and passionate Sushi Chef to join our award-winning culinary team. Located at the world-renowned Four Seasons Resort Maui at Wailea, Spago combines Wolfgang Puck's innovative culinary vision with the freshest local ingredients and exceptional hospitality.

This is an exciting opportunity for a skilled sushi professional who takes pride in craftsmanship, precision, and delivering unforgettable guest experiences. The ideal candidate is passionate about Japanese cuisine, maintains the highest standards of quality and food safety, and thrives in a fast-paced fine dining environment.

What You'll Do

  • Prepare and present sushi, sashimi, nigiri, rolls, and specialty Japanese dishes according to established recipes and presentation standards
  • Ensure proper handling, storage, fabrication, and utilization of seafood and other ingredients
  • Maintain exceptional quality, consistency, and attention to detail during all service periods
  • Assist with daily mise en place, production planning, and station organization
  • Monitor product freshness and inventory levels while minimizing waste
  • Follow all food safety, sanitation, and HACCP guidelines
  • Maintain a clean, organized, and professional workstation
  • Collaborate with culinary leadership and team members to ensure smooth service execution
  • Support menu development, seasonal features, and continuous culinary innovation
  • Uphold Wolfgang Puck culinary standards and guest experience expectations

What We're Looking For

  • Minimum 3 years of sushi chef experience in an upscale, fine dining, luxury hotel, or high-volume restaurant environment
  • Strong knife skills and seafood fabrication experience
  • Knowledge of traditional and contemporary sushi preparation techniques
  • Understanding of food safety, sanitation, and proper seafood handling procedures
  • Ability to work efficiently while maintaining exceptional quality standards
