The Product Marketing Manager supports the planning, coordination, and execution of Rubioโ€™s promotional, LTO, menu, gift card, and in-store marketing initiatives. This role serves as a key connector across departments, helping ensure that new products, promotions, and marketing programs are launched successfully, on time, and with operational excellence.

The Product Marketing Manager keeps projects organized, timelines on track, and cross-functional partners aligned from planning through launch. They play a critical role in bringing menu innovations and marketing initiatives to life by coordinating stakeholders, managing project details, identifying risks, and ensuring clear communication throughout the process.

The ideal candidate is highly organized, detail-oriented, analytical, and proactive, with strong communication skills and the ability to manage multiple workstreams in a fast-paced restaurant environment. They should be comfortable collaborating across departments, navigating changing priorities, and translating strategy into flawless restaurant execution. Success in this role requires a balance of project management discipline, marketing creativity, operational awareness, and a passion for delivering great guest experiences.

Key ResponsibilitiesLTO & Promotional Planning and Execution โ€” 50%
  • Manage project timelines, status updates, approvals, and key milestones for promotional and LTO rollouts.
  • Coordinate print collateral, menus, POP materials, digital assets, and other in-store marketing materials in partnership with the creative team.
  • Partner with culinary, operations, finance, purchasing, creative, training, and external vendors to gather inputs and keep teams aligned.
  • Facilitate regular cross-functional meetings to review progress, identify risks, and drive next steps.
  • Support pricing reviews by organizing COGS, product mix, competitive data, and other relevant inputs.
  • Help organize competitive research, guest feedback, internal data, and industry trends to support menu and promotional planning.
  • Ensure marketing programs are operationally executable by collaborating closely with restaurant operations and training teams.
  • Assist in developing launch recaps and performance summaries, identifying key insights and opportunities for future promotional optimization.
  • Maintain project documentation, marketing calendars, timelines, and launch checklists.
  • Serve as a point of contact for internal stakeholders throughout the development and rollout process.
Product & Menu Initiative Support โ€” 20%
  • Support the product and menu calendar by coordinating timelines, meetings, deliverables, and cross-functional updates.
  • Help manage menu changes, LTOs, and product updates from early planning through restaurant rollout.
  • Track open items, dependencies, risks, and next steps to keep projects moving.
  • Participate in brainstorms, tastings, menu reviews, and planning discussions while documenting decisions and follow-ups.
  • Assist in the development of product positioning, key messaging, and launch support materials.
  • Coordinate communication plans and launch materials to ensure restaurants are prepared for menu changes and promotional initiatives.
  • Monitor industry and competitive activity to identify emerging trends, product opportunities, and market insights.
  • Support testing initiatives and pilot programs by coordinating logistics, documenting results, and communicating learnings.
Gift Card Program Support โ€” 20%
  • Assist with gift card program updates, seasonal promotions, partner requests, and internal communication.
  • Help coordinate with gift card partners and internal stakeholders to support program accuracy, compliance, and growth.
  • Track timelines, promotional details, deliverables, and approvals for gift card initiatives.
  • Monitor program performance and compile reporting to help identify trends and opportunities.
  • Support the execution of holiday gift card promotions and other key seasonal initiatives.
  • Ensure creative assets, promotional materials, and internal communications are completed accurately and on schedule.
Brand Marketing Initiatives โ€” 10%
  • Assist with brand partnerships, physical coupons, local marketing programs, out-of-home materials, and other promotional campaigns as needed.
  • Coordinate project details, vendor communication, internal approvals, and launch materials.
  • Ensure campaign details are accurately shared with the appropriate internal teams and field leadership.
  • Support marketing efforts that drive guest acquisition, frequency, and brand awareness.
  • Help track campaign results and summarize key learnings to improve future marketing performance.
  • Contribute to special projects and strategic initiatives that support the overall growth of the Rubioโ€™s brand.
Qualifications
  • Bachelor's degree in Marketing, Business, Communications, or a related field preferred.
  • 5+ years of experience in marketing, project management, product marketing, promotions, brand marketing, or related roles.
  • QSR, restaurant, retail, hospitality, or CPG experience strongly preferred.
  • Experience supporting product launches, menu updates, pricing changes, promotions, print campaigns, digital campaigns, or in-store rollouts.
  • Strong project management skills with the ability to manage multiple timelines, deliverables, and dependencies simultaneously.
  • Demonstrated ability to coordinate cross-functional teams and drive projects from concept through execution.
  • Highly organized and detail-oriented, with strong follow-through and accountability.
  • Excellent written, verbal, and presentation communication skills.
  • Comfortable working across marketing, culinary, operations, finance, purchasing, creative, training, and external vendor teams.
  • Able to use data, guest feedback, competitive research, and internal insights to support planning and recommendations.
  • Proactive problem solver who can identify bottlenecks, clarify next steps, and keep projects moving.
  • Strong proficiency with Microsoft Office, particularly Excel, PowerPoint, and project management tools.
