Job description

Reports to: Senior New Cafe Opening Manager
With a projected 1,000 cafes in the United States by 2030, Paris Baguette is one of the fastest-growing neighborhood bakery cafés in the world. WHAT WE ARE HUNGRY FOR
As the New Cafe Opening Manager (NCOM), you will be the leader of the NCO Team, and a point person for each opening. You are ultimately responsible for a seamless opening process, along with the rest of the NCO team. You will be responsible for training the NCO Franchise owner and their General Manager (GM) on all management functions of operating their business. You will also need to ensure that our NCO Specialists, who are responsible for Front of House training with Retailers, are adhering to the training plans, and there is high impact to their training with all new hires.
Your focus is on ensuring you and the NCO team are driving a culture of teaching and learning around sales, service, quality and operational excellence to ensure we leave new Franchise teams with learnings that support their success.
KNOWLEDGE AND RESPONSIBILITIES
  • Trains Franchise Owners and General Managers on the basic management functions that they need to excel in to run a solid operation, such as impactful scheduling, time and attendance management, management of cash handling process and processes, inventory management, and general people leadership.
  • Arrives on site ahead of full NCO Team to test and calibrate espresso machine, TurboChef, and POS ensuring the café is prepared to hold training.
  • Directing the reception, organization, and storage of the initial product, smallware, and disposable orders ensuring health and safety codes are met.
  • Hangs compliance signage in accordance with the local and federal law while ensuring all Marketing and promotional materials are to specification.
  • Provides training to Owner/GM and all FOH and BOH teams on understanding and creating a culture aligned to Paris Baguette's Mission, Vision and Brand Values.
  • Provides training to Owner/GM and all FOH and BOH teams on the adhering to the highest standards of product quality, and be able to identify what "good" looks and tastes like, and what opportunity with production looks and tastes like.
  • Works collaboratively with Owner/GM to provide feedback on staffing of the Front of House and Back of House teams to ensure there is a fully staffed and trained team during the opening, and make recommendations for any gaps.
  • Works closely with the NCO Production Manager and Owner/General Manager to ensure that the café is producing the appropriate amount of quality product based on each day's projected sales volume, while managing to sales and traffic trend.
  • Works collaboratively with NCO Production Manager to train Owner/General Manager on end of Month Back of House inventory, per company guidelines.
  • Works collaboratively with NCO Production Manager to train Owner/ General Manager and Back of House team on the process of ordering and receiving shipments.
  • Works collaboratively with NCO Production Manager to train FOH & BOH teams on sanitation and food safety standards.
  • Work closely with NCO Production Manager & NCO Production Specialists to collaboratively ensure BOH new hires are provided with refreshers on prior training as well as are supporting with production execution.
  • Is constantly providing direction and clarity around best-in-class Paris Baguette processes and procedures, to operate at the highest level of effectiveness and efficiency.
  • Partner daily with Franchise/District Manager on successes and opportunities.
  • Work closely with Franchise/District Manager, NCO Production Manager, and Owner/GM on a plan to address daily opportunities.
  • Work closely with Training and Development as well as the District Production teams to support the opening.
  • Ability to work extended workdays to support the business as needed.
  • Ability to travel and have a flexible work schedule.
  • Will support Field Operations, as needed, during open time in between scheduled openings.
  • Other duties may be assigned.

  • At least 5 years of Restaurant experience/ Bakery Café experience preferred.
