Job description

Position: Kitchen Manager (Full-Time)
Location: Bricktown Brewery – Branson, MO.
Salary: $60,000–$65,000, dependent on experience

Summary:
Provide exceptional guest experiences every visit through direction and leadership of all kitchen team members to ensure high-quality food is prepared and served in a timely manner from a clean and sanitized kitchen.

Reports To: General Manager

Essential Duties & Responsibilities:
  • Ensure food items are prepared according to company standards for quality, consistency, timeliness, and guest specifications.
  • Interview, hire, train, evaluate, and coach kitchen team members in food production principles and best practices.
  • Partner with the Culinary Department to successfully roll out menu changes.
  • Conduct daily food audits by checking flavor, appearance, consistency, and temperature.
  • Schedule kitchen team members based on business forecasts and predetermined budgets on a weekly basis, and assign daily responsibilities for each kitchen area.
  • Control food costs by establishing purchasing specifications, conducting weekly inventory through Ctuit, utilizing inventory control systems, maintaining product storage requirements, following standardized recipes, and implementing waste control procedures.
  • Ensure compliance with all health department standards for safe food handling and prepare food according to company procedures, time guidelines, and guest specifications.
  • Ensure all equipment is operated safely by team members and that OSHA regulations are followed.
  • Sign off on BOH team members at the end of their shifts.
  • Attend and participate in weekly manager meetings and communicate team member issues or concerns through manager meetings and/or the digital manager log.
  • Perform other duties as assigned by Regional Management, the General Manager, or Operations Leadership.

Knowledge, Skills & Abilities:
  • Knowledge of guest service principles and processes, including active listening, guest needs assessment, service standards, and guest satisfaction.
  • Effective communication skills.
  • Knowledge of menu items and proper food preparation techniques.
  • Strong coaching and performance management skills with the ability to motivate, develop, and direct team members.
  • Ability to analyze information and manage financial performance through budgeting, P&L comprehension, math skills, and reading comprehension.
  • Ability to make sound decisions in a fast-paced environment.
  • Working knowledge of restaurant equipment and local and national health codes.
  • Strong time management skills with the ability to manage personal time and the time of others.
  • Proficiency with Ctuit, Aloha POS, Excel, Word, Chef Pad, and Outlook.

Education & Experience:
  • Minimum of 2 years of restaurant experience required.
  • Minimum of 1 year of restaurant management experience preferred.
  • Must be at least 21 years of age.

Performance Standards:
  • Meets all company service standards.
  • Ensures all BOH team members:
    • Consistently practice safe food handling.
    • Prepare recipes according to Bricktown Brewery specifications.
    • Read and accurately follow instructions.
    • Prepare menu items within established time standards.
    • Adhere to cleanliness and sanitation guidelines.
    • Understand temperature danger zones and proper food storage hierarchy (ServSafe or equivalent).
  • Adheres to all company policies and procedures, including appearance standards.
  • Maintains an upbeat and professional attitude with guests and team members.
  • Completes all required certifications and validations (LTOs, new menu training, etc.).
  • Maintains prompt and regular attendance.
  • Coaches and addresses team members who do not meet performance expectations.

Physical Requirements:
  • Stand and/or walk for up to 10 hours.
  • Maintain constant communication with kitchen staff and FOH management.
  • Perform effectively in a fast-paced, high-pressure environment while maintaining quality and speed standards.
  • Lift and carry boxes, sacks, and products weighing up to 50 pounds from floor level to above the waist for approximately 20 feet, including occasional stair use.

Training Requirements:
  • Successfully complete all hourly position validations, including required company training (safety, systems, and menu knowledge), and obtain required alcohol and food safety certifications (ServSafe and/or other state-required certifications) within 60 days of employment.
  • Successfully complete the Bricktown Brewery Manager-in-Training program at the assigned restaurant or a nearby location.
