Job description

Description

Brought to you by Hi Noon Hospitality, the group behind Buck & Rider, Pinyon is a high-end coastal Mediterranean restaurant inspired by the bold, vibrant flavors of the sun-soaked shores of Greece, Spain, and Southern Italy. We highlight the freshest local seafood, prime meats, and seasonal produce: expertly prepared over live fire. Our kitchen is driven by precision, passion, and an obsession with quality.

Position Overview:

We are seeking an experienced and skilled Cook with a strong background in Mediterranean cuisine and live charcoal cooking. Ideal candidates will have hands-on experience with a Josper charcoal oven or similar solid fuel equipment, and a deep respect for fire-driven cooking techniques. You'll be part of a fast-paced, collaborative culinary team focused on excellence in execution and presentation.

Key Responsibilities:

  • Prepare and execute dishes with consistency and finesse, particularly those cooked over live charcoal.
  • Operate and maintain a Josper or comparable charcoal oven with confidence and skill.
  • Work closely with the Executive Chef and Sous Chefs to execute the daily menu with precision.
  • Maintain proper food handling, sanitation, and safety standards.
  • Assist in daily prep, mise en place, and station setup.
  • Uphold the high culinary standards and seasonal sensibilities of the restaurant.
  • Contribute to a clean, organized, and efficient kitchen environment.

Qualifications:

  • 2+ years of experience in a professional kitchen, preferably at a high-end restaurant.
  • Proven experience cooking over live charcoal or open flame.
  • Experience with a Josper oven or similar solid-fuel cooking equipment is a strong plus.
  • Familiarity with Mediterranean ingredients, flavors, and techniques.
  • Excellent knife skills, attention to detail, and a sense of urgency.
  • Team-oriented with a positive attitude and strong work ethic.
  • Ability to work evenings, weekends, and holidays as required.

Benefits & Perks:

  • Health benefits for full-time employees
  • Competitive pay based on experience
  • Opportunities for advancement within a growing concept
  • A collaborative and respectful kitchen culture
  • Exposure to top-tier ingredients and techniques
