Description
At de Lazy Lizard, the Expo is the command center of the kitchen - the final checkpoint that ensures every dish leaving the window is accurate, properly presented, and sent out at the right time. In a high-volume, fast-paced tropical restaurant environment, the expo keeps the kitchen and front-of-house teams moving in sync so every guest receives hot, correct food without delay while the guests enjoy the laid-back island experience.
The Expo is responsible for organizing and managing the flow of food from the kitchen to the dining areas. This includes reading and organizing tickets, coordinating with cooks across multiple stations, verifying modifiers, checking plate presentation, and ensuring each order is complete before it leaves the window. The expo works closely with cooks, food runners, and managers to maintain speed, accuracy, and clear communication throughout service. This role requires strong attention to detail, clear communication, and the ability to stay calm and organized during high-volume shifts. The expo must prioritize tickets efficiently, call for missing items, coordinate order timing between stations, and ensure food runners deliver dishes to the correct tables. The position also helps maintain a clean and organized expo window, restocks garnishes and supplies, and assists with opening and closing duties. A strong expo keeps the kitchen running smoothly, prevents mistakes before they reach guests, and ensures every plate meets the restaurant's standards.

  • Communicate clearly with cooks, food runners, and managers to keep service running smoothly.
  • Call out orders to food runners and ensure dishes are delivered to the correct tables quickly.
  • Monitor ticket times and work with the kitchen team to keep food moving during high-volume periods
