POSITION SUMMARY:

Food & Beverage Manager ("F&B Manager") will manage a diversified business that includes a full services grill, kitchen, fast food service, concession stands, mobile food carts, online meals, team meals, and catering services. The F&B Manager must have the ability to effectively manage food inventories, customize menus, train staff and drive productivity.

PRIMARY RESPONSIBILITIES WILL INCLUDE, BUT ARE NOT LIMITED TO THE FOLLOWING:

  • Work as a team player with other members of management to ensure continuity and teamwork is displayed, embraced and leveraged at all times
  • Conduct regular inspections of units to observe the quality of food preparation and service, food, appearance, cleanliness, sanitation, productivity, equipment condition and employee appearance
  • Coordinate training activities inclusive of all food and beverage locations and roles for production and service employees
  • Prepare and input all cost and sale information the POS database to ensure operational reports and budget analyses are accurate and drive decisions
  • Execute scheduling staff working in conjunction with Operations Manager for all events and food and beverage activities
  • Order, coordinate, prepare and execute all set-up service for all Food & Beverage activities property wide and online
  • Develop strategies and identify opportunities to minimize food costs and maximize revenue
  • Manage and motivate the part-time team to increase sales and ensure efficiency
  • Manage stock levels and making key decisions about stock control analyzing sales figures and forecast future sales
  • Resolve health and safety, legal and security issues and ensure all food and beverage locations are always prepared for health and safety inspections
  • Organize special promotions, displays, and menus to ensure maximum coverage and client satisfaction is achieved
  • Support and enforce all processes, rules, programs and staff management practices
  • Ensure food and beverage is properly, professionally and creatively displayed for all events to include the food presentation, table presentation, and food quality
  • Ensure venue is operating within all food and beverage health codes, proper food preparation, cooking guidelines and sanitation requirements
  • Control and manage all aspects of the Food and Beverage inventory including executing weekly/monthly inventories, food ordering, invoicing, pricing and cost controls
  • Adhere to all cash handling policies to ensure the highest possible integrity of our cash flow is managed and achieved
  • Maintain a level of personal and professional integrity as a representative of the community and represent the client
  • Demonstrate a fair and equitable business practice with all vendors and clients
  • All other duties as assigned by management

MINIMUM QUALIFICATIONS:

  • Four years of experience in a similar position
  • Ability to operate all kitchen equipment
  • Working knowledge of Excel, Word, PowerPoint, Outlook and POS Systems
  • Demonstrated ability to teach cash handling, POS operation, food safety and handling guidelines
  • Willingness to engage in continuing education to meet all of the requirements of this position
  • Initiative, drive, and dedication
  • Must have excellent interpersonal, problem solving, and negotiating skills
  • Must have excellent verbal and written communication skills
  • Must have strong organizational skills
  • Must be able to work flexible schedules including weekends, nights, and holidays
  • Prior responsibility for P&L management and budget oversight

WORKING CONDITIONS AND PHYSICAL DEMANDS:

  • Must be able to lift 40 pounds waist high
  • May be required to sit or stand for extended periods of time whether indoors or outdoors, and squat, stoop, bend, carry, lift, pull, and push
  • Workplace environment has intermittent noise, generally moderate in nature, but can be loud at times especially during competitions and events
