Job description

Role Summary:  

A kitchen team member serves as guardian and is focused on leading the Operational Excellence pillar of the Creating Raving Fans Strategy in the Back of House.  They foster kitchen team unity and delivers the highest quality products by meeting Chick-fil-A standards (requirements), while controlling costs.

Primary Duties and Responsibilities

Communicate effectively and timely with kitchen staff and leadership

Conducts RQAs as requested

Ensure kitchen/restaurant is opened/closed properly

Manage chicken rotation (including chicken tracking system)

Manage chicken cool down process

Assists with CFA Anywhere orders and collaborate with Catering Manager to ensure quality catering

Follow all policies and Quality/Standards

Follow Restaurant Vendor check-in policy

Adhere to holding times and use timers for all food products

Responsible for taking temperatures of each product, each shift (in addition to RQA)

Follow RQA program daily

Check temperatures of freezer and refrigerators regularly during shifts

Implement necessary changes from health inspection reports and ROE

Use the KIV and all inventory management processes

Understand HACCP Plan for chemicals and hazardous substances

Make sure Quality Photos, recipe cards, CFAA cards & Sampling cards are used at all times

Ensure Profitability by Monitoring Costs: Food cost, Paper cost, Labor cost

Create culture of continuous improvement in kitchen (no shortcuts)

Communicate operational improvement ideas to Operator

Benchmarks & Accomplishments

Certification in all TMDP modules

Recipe for Service Training
