Job description

We are seeking an experienced and passionate International Chef specializing in Caribbean cuisine with a minimum of five (5) years of professional experience. The ideal candidate will have in-depth knowledge of authentic Caribbean flavors, spices, and cooking techniques, and the ability to deliver high-quality dishes that reflect traditional and modern Caribbean culinary styles in an international setting.


Key Responsibilities:

  1. Prepare, cook, and present authentic Caribbean dishes with consistency and high quality
  2. Develop and curate menus inspired by Caribbean cuisines, including traditional and contemporary interpretations
  3. Ensure proper use of Caribbean spices, marinades, and cooking techniques (jerk, stewing, grilling, roasting, etc.)
  4. Oversee daily kitchen operations, ensuring efficiency and quality standards
  5. Maintain strict adherence to food safety, sanitation, and hygiene regulations
  6. Manage inventory, food costs, and supplier coordination for specialty ingredients
  7. Train and supervise kitchen staff in Caribbean cooking techniques and presentation
EDUCATIONAL REQUIREMENTS AND EXPERIENCE
  1. High school diploma or equivalent.
  2. Must be able to read, write, speak, and understand English.
  3. Knowledge of standard cooking, baking, and grilling techniques.
  4. A current NYC Food Handler Permit/ServSafe Food Handler Permit
  5. 1 year minimum of prior experience in a full service kitchen

SKILLS REQUIREMENTS
  1. Manages time effectively - understands and follows written and verbal directions explicitly and asks questions for clarity when necessary.
  2. Able to learn new recipes and new procedures rapidly.
  3. Possesses fair mathematical skills
  4. Must be able to work standing for extended hours.
  5. Must be able to move about in close quarters, handle heat and handle fast work pace for extended hours.
  6. Must be able to remain calm and cool under pressure
  7. Must be able to lift up to 50 lbs.


HYGIENE AND DEPORTMENT
  1. Cover hair at all times.
  2. Wear the proper uniform at all times.
  3. Ensure that nails are kept short and clean - no nail polish
  4. Exhibit good hygiene at all times
  5. Wear full shoes at all times - No slippers.
  6. Jewelry, except for a plain band, is prohibited.


PERFORMANCE CRITERIA

This job is satisfactorily performed when:

  2. The kitchen is kept neat and clean at all times
