Job description

ESSENTIAL JOB FUNCTIONS
  • Responsible for the overall management and cleanliness of kitchen and related areas.
  • Ensure high levels of cleanliness, sanitation and organization in kitchen and related areas to ensure a safe and hygienic environment for food preparation and service.
  • Align department objectives, standards and guidelines with company vision and culture.
  • Monitor and provide direction to Dacotah Dining Stewards.
  • Ensure staff adherence to health department regulations regarding food handling, storage, temperature and sanitation.
  • Work closely with Executive Chef and Director of Food & Beverage to organize cleaning activities.
  • Organize applicable areas for effective and efficient service and coordination.
  • Ensure all refrigerators, ovens, freezers, coolers, walk-ins and other kitchen equipment are kept to company food safety standards and are functioning properly.
  • Ensure all dishware, glassware, pots, silverware, cooking utensils, pots and pans are cleaned properly and in a timely manner.
  • Ensure daily cleaning is performed to include all applicable areas (e.g. dry storage, walk-in shelving, hoods, exhaust system, etc.).
  • Conduct an internal food safety audit on a weekly basis.
  • Conduct an inventory of dishware, glassware, silverware, cooking utensils, pots and pans on a quarterly basis.
  • Perform duties of Dacotah Dining Steward as necessary.
  • Report any maintenance or safety issues to management and ensure that repairs are made in a timely manner.
  • Procure stewarding supplies, chemicals and equipment to ensure compliance with health department regulations.
  • Procure kitchen supplies and equipment to ensure quality of food and compliance with health department regulations.
  • Assist in planning, setup and breakdown of special events as needed.
  • Perform other duties and responsibilities as assigned.

EXPERIENCE & QUALIFICATIONS
  • Previous experience working as a lead steward or similar position preferred.
  • High school diploma or general education degree (GED).
SKILLS, KNOWLEDGE & ATTRIBUTES
  • Strong communication and leadership skills.
  • Strong time management skills.
  • Knowledge of proper sanitation and food safety procedures.
  • Knowledge of inventory management.
  • Ability to effectively lead and train Dacotah Dining Stewards.
