THE JOB:
We are seeking an exceptional Restaurant General Manager to spearhead the opening of an exciting new dining destination at MGM Grand, delivering unparalleled guest experiences while positioning the venue as a premier culinary and hospitality destination. As the Restaurant General Manager, you will oversee all aspects of restaurant operations, providing strategic leadership to the management and service teams. This role is responsible for driving financial and operational performance, optimizing reservations and guest traffic, developing high-performing team members, executing key property initiatives, and ensuring exceptional service delivery. The General Manager will foster a culture of excellence, maintain the highest standards of venue presentation and functionality, and create memorable experiences that inspire guest loyalty and establish the restaurant as a premier dining destination. All duties are performed in accordance with company policies, procedures, and service standards.
THE DAY-TO-DAY:
  • Owns, leads and oversees daily restaurant operations, labor productivity, scheduling, inventory control, guest service standards, and execution and development of marketing strategies to produce both short-term and long-term profitability. Co-own (with Executive Chef) the restaurant's business plan and represent the restaurant in divisional, property or corporate meetings
  • Lead, inspire, and develop a high-performing team, fostering an environment that prioritizes the employee and guest experience
  • Drive financial and operational performance, including revenue growth, covers, and reservation channel optimization
  • Own staffing, scheduling, coaching, and performance management
  • Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules and regulations for the restaurant staff. Owns restaurant's execution of F&B and/or company-wide initiatives and programs
  • Ensure the highest standards of service, facility presentation, and brand alignment
  • Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage. Responsible for completion of all company compliance training by the restaurant staff
  • Maintains excellent knowledge of venue's food & beverage products, menu items and equipment used to perform duties

THE IDEAL CANDIDATE:
  • High School Diploma or GED required
  • 2+ Years of Prior Relevant Experience required
  • Previous experience working in a high-volume restaurant or previous experience in a luxury or fine-dining restaurant preferred
  • Experience executing high-profile restaurant or venue openings within a luxury hospitality environment preferred
  • Previous experience managing employees under a collective bargaining agreement preferred
