Position Summary

The Fishmonger is responsible for receiving, inspecting, breaking down, and maintaining premium fish and seafood to exacting sushi-grade standards. Working in close partnership with the sushi chefs, this role is foundational to the quality and integrity of SUZU's sushi and Suzune' omakase programs. The ideal candidate has refined knife skills, a deep respect for product, and meticulous standards for freshness, handling, and food safety.

Compensation

$15.00–$22.00 per hour, based on experience.

Key Responsibilities

Fish Receiving & Quality Control

  • Receive and inspect fish and seafood deliveries for freshness, temperature, and quality
  • Verify orders, grade product, and reject any items that do not meet sushi-grade standards
  • Document receiving, temperatures, and traceability per food-safety requirements

Butchery & Fabrication

  • Break down, fillet, portion, and fabricate whole fish and seafood with precision and minimal waste
  • Prepare product to the specifications of the sushi chefs and culinary leadership
  • Maintain and sharpen knives and fabrication tools to professional standards

Storage & Handling

  • Store, label, date, and rotate product to preserve quality and ensure FIFO
  • Maintain proper temperatures, packaging, and handling throughout the process
  • Maximize yield and minimize waste through careful handling and portioning

Inventory & Sourcing Support

  • Track product usage and par levels and communicate ordering needs to the chefs
  • Support relationships with purveyors and assist with quality feedback on sourcing
  • Help maintain organized, accurate walk-in and storage areas

Sanitation & Food Safety

  • Follow all HACCP, sanitation, and food-safety protocols rigorously
  • Maintain immaculate cleanliness of the fish station, tools, and equipment
  • Adhere to all Ohio food-safety regulations and SUZU standards

Qualifications

  • 2+ years of fish handling, butchery, or seafood fabrication experience (sushi-grade strongly preferred)
  • Excellent knife skills and knowledge of whole-fish breakdown techniques
  • Strong understanding of fish quality, freshness, and proper handling
  • ServSafe / food-handler certification (or ability to obtain); HACCP awareness a plus
  • Reliability, precision, attention to detail, and respect for product
  • Passion for Japanese cuisine and the craft of sushi
