Position Summary

The Food Truck General Manager is responsible for overseeing all aspects of the food truck operations, including leadership, staffing, guest service, food quality, financial performance, and operational efficiency. This role plays a key part in creating a positive team culture while ensuring Capriotti’s standards for quality, cleanliness, and hospitality are consistently maintained.


Key ResponsibilitiesTeam Leadership & Development
  • Recruit, hire, train, and develop team members
  • Lead, coach, and motivate employees to deliver exceptional performance
  • Foster a positive, respectful, and team-oriented work environment
  • Create employee schedules and manage staffing levels effectively
  • Support ongoing training and career development initiatives
Operational Management
  • Oversee daily food truck operations, including food preparation, service, cleanliness, and safety
  • Ensure compliance with all company policies, food safety standards, and health regulations
  • Maintain high standards for food quality, presentation, and guest satisfaction
  • Monitor inventory levels and assist with ordering and cost controls
  • Manage cash handling, deposits, and daily reporting procedures
Guest Experience
  • Deliver outstanding customer service and hospitality
  • Address guest concerns professionally and promptly
  • Lead by example in creating a welcoming and engaging atmosphere

Qualifications
  • 2+ years of restaurant management or leadership experience preferred
  • Experience in fast-casual, quick-service, or hospitality environments is a plus

  • Excellent communication and interpersonal abilities
  • Strong organizational and time-management skills
  • Knowledge of scheduling, labor management, inventory, and restaurant operations
  • Comfortable using POS systems and basic computer programs
  • Must be at least 18 years old

Physical Requirements
  • Ability to stand and walk for extended periods
  • Ability to work in varying temperatures ranging from 0°F to 100°F
  • Ability to lift and carry up to 50 pounds
  • Ability to balance and move up to 25 lbs. for distances up to 50 feet.
  • Ability to perform tasks requiring bending, reaching, and movement throughout the food truck.
