The Sous Chef - Pastry plays a vital role in elevating the culinary experience at Live! Casino & Hotel by leading the pastry program with creativity, precision, and exceptional craftsmanship. Your expertise in developing and executing high-quality pastries, desserts, and baked goods ensures that every item reflects our commitment to excellence and enhances the guest experience. Through thoughtful recipe creation, meticulous production standards, and effective leadership of the pastry team, you help drive innovation, maintain consistent product quality, and support a well-organized, efficient kitchen environment.
Responsibilities
Where You'll Make an Impact:
  • Operate and manage the pastry section of a kitchen, working together with the Executive Chef, Executive Sous Chef and Chef De Cuisine
  • Prepare a variety of baked goods.
  • Decorate and present pastries and baked goods in a tasteful and beautiful way.
  • Monitor and order ingredients, supplies and equipment needed through upper leadership.
  • Ensure the bakery section of the kitchen adheres to health and safety regulations.
  • Develop new seasonal recipes and menus and keep up with the latest trends as discussed through upper leadership.

Skills to Help You Succeed:
  • Able to understand and follow instructions.
  • Food cost and recipe development experience
  • Able to work well with others but also self-motivated.
  • Able to stand for long periods of time and work in heat.
  • Establish production lists and pars.
  • Cake decorating experience.
  • Bake off pastry, per production sheet.
  • Follow recipes per company standard.
  • Mix, prepare and finish pastry on a production sheet.
  • Maintain Live Casino Hotel's high standards for product Quality.
  • Abide by the health department requirements and maintain a clean work area.
  • Responsible for an assigned clean up task at shift conclusion.
  • Assisting in other duties as assigned by Executive Chef and Executive Sous Chef.

Qualifications
Must Haves:
  • Five to seven years' experience in pastry and baking.
  • A 4-year degree in related fields or equivalent work experience.
  • Willingness and ability to be flexible with work schedule. May require extended hours and work week from time to time.
  • Must be able to comply with all state gaming regulations, which may include obtaining a license and an Alcohol Beverage Control card as well as any applicable health certificates.

Physical Requirements:
  • Standing and moving continuously throughout the shift, often for extended periods.
  • Working in high-heat environments, including ovens, warm prep spaces, and busy kitchen areas.
  • Lifting, carrying, and transporting ingredients, equipment, and supplies weighing up to 50 pounds.
  • Bending, reaching, twisting, and performing repetitive motions associated with mixing, decorating, and preparing pastries.
  • Utilizing fine motor skills and hand dexterity for detailed pastry work, including decorating, shaping, and finishing items.
  • Safely operating standard pastry and bakery equipment such as mixers, ovens, proofers, sheeters, and small tools.
  • Maintaining visual acuity sufficient to inspect products for quality, precision, and presentation standards.

Working Conditions:
  • 24/7 high energy casino with over 300,000 sq. ft of gaming and entertainment space and approximately 3000 employees.
  • Exposed to alcohol, cigarette and cigar smoke, bright lights, and loud noises.
  • You will work in an environment where smoking is allowed.
  • Willingness and ability to be flexible with work schedule. May require extended hours and work week from time to time.
