Sous Chefs – Fat of the Land

Location: Santa Ana, CA and Irvine, CA
Position: Two separate Full-Time Positions

At Fat of the Land, we're not interested in cookie-cutter cooking. We are two small, chef-driven restaurants where Spanish traditions meet modern technique, built around exceptional ingredients, thoughtful hospitality, and a team that genuinely loves what they do.

We're looking for two new Sous Chefs who wants to be part of something special—"F*** Normal. We want Magic."

What You'll Do
  • Work directly with the Executive Chef and C.D.C. to execute lunch and dinner service at a high level.
  • Lead the kitchen when the CDC and Chef is away.
  • Maintain the highest standards of food quality, consistency, and presentation.
  • Help train, mentor, and inspire the kitchen team.
  • Assist with ordering, inventory, food costing, and prep organization.
  • Ensure cleanliness, organization, and health department compliance.
  • Contribute ideas for seasonal menus and daily specials.
  • Help create a positive, professional kitchen culture where everyone continues to learn.
We're Looking For Someone Who
  • Has 2+ years of experience in an upscale or fine dining kitchen.
  • Thrives in a fast-paced, detail-oriented environment.
  • Understands classical cooking techniques and has excellent knife skills.
  • Takes pride in organization, cleanliness, and consistency.
