Job description

This position is located at our Bakery Commissary in West Chester, Pa.
The Head Production Baker helps lead a team focused on artisan bread baking including
mixing, shaping and baking off all daily bread, including sourdoughs, focaccia, brioche, and
challah. The Head Production Baker is also responsible for dough production for the pizza
departments of the company. In this role, you will scale, divide, mix, pre-shape, shape, and
finish products, as well as train to work both the rack and deck oven.
This position answers to the Corporate Executive Pastry Chef
Responsibilities
 Perform daily bread baking, scaling, and shaping requirements
 Bake off breads and bread products, using both the rack and deck ovens
 Finish products after baking, as necessary
 Lead inventory management
 Train new team members on recipes and processes
 Develop and execute plans for special orders and holiday production
 Maintain overall cleanliness of the bakery and compliance with all health department
regulations
 Work collaboratively as part of a team of bread bakers and pastry cooks
 Ensure quality standards and overall product consistency
