What are some common challenges faced in a Culinary Research Development role and how can they be overcome?

Professionals in Culinary Research Development often encounter challenges such as balancing creativity with cost-effectiveness, adapting recipes for large-scale production, and meeting diverse dietary requirements. Collaboration with cross-functional teams—like marketing, nutrition, and manufacturing—is essential to ensure that products are innovative yet feasible. Staying up-to-date with food trends and consumer preferences also requires ongoing research and flexibility. Success in this role often depends on strong project management skills and open communication within the team.

What Are Culinary Research and Development Jobs?

Culinary research and development jobs focus on using food science and the culinary arts to create new food and drink options for a menu. Common job titles include research chef, culinary research and development specialist, and culinary research and development chef. In any of these roles, you may select the ingredients for each recipe, help determine whether or not a dish should go on the menu, and focus on using innovation during the R&D process to meet the company's goals. This job has two major components. First, on the culinary side, your job is to create the best dishes you can. On the other hand, employers also expect you to consider the practical and business aspects of a dish. This includes how costly the ingredients are, how easy the ingredients are to get, whether or not it's possible to work the ingredients into a supply chain, and how easy it is for another chef to replicate the dish in a timely manner.

What are the key skills and qualifications needed to thrive in Culinary Research Development, and why are they important?

To excel in Culinary Research Development, a strong background in culinary arts, food science, and recipe formulation—often supported by a relevant degree or certification—is essential. Familiarity with food safety regulations, sensory evaluation tools, and product development software is typically required. Creativity, attention to detail, and effective communication set outstanding professionals apart in this field. These skills are crucial for innovating new food products that are both safe and appealing, while meeting industry standards and consumer needs.

What is Culinary Research and Development?

Culinary Research and Development (R&D) is a specialized field that focuses on creating, testing, and improving food products, recipes, and cooking techniques. Professionals in this area work in various settings, such as food manufacturing companies, restaurants, and test kitchens, to innovate and develop new menu items or packaged foods. They blend culinary creativity with scientific principles to ensure products are safe, tasty, and marketable. Culinary R&D often involves collaborating with chefs, food scientists, and marketing teams to bring new food concepts to life.

Job description

At Blue Bottle, our mission is to connect the world to delicious coffee. From seed to cup, we elevate the craft of coffee in everything we do. We strive to build a better tomorrow by investing in what matters: a sustainable future for our people, the company, and our planet.

About the job

As the Product Manager for Menu & Product Management, you will be the strategic owner of our Beverage and Culinary portfolios. You will act as a central pillar within our "Core Triangle" organizational structure, which integrates Menu & Product Management, Product R&D, and Marketing to drive a unified "ONE CALENDAR" mechanism. You will be directly reporting to the Manager of the Global Menu/Product Management with a dotted line reporting to the GM of Japan and Korea.

You will
  • Drive Cross-Functional Collaboration: Partner closely with the Korea Brand Director and Global R&D Lead to ensure all menu and product initiatives align with regional brand goals and global standards.

  • Operate the Core Triangle: Act as a central pillar in the "ONE CALENDAR" system, collaborating directly with Product R&D and the Marketing Department to form an integrated driving mechanism for product launches.

  • Lead Menu Planning & Positioning: Develop portfolio strategies and define the role of each category within the Beverage and Culinary scope to ensure SKUs support business growth.

  • Optimize Category Strategy: Strategically position Beverage offerings (e.g., consolidating business via Espresso, attracting new guests via Entry-level Non-Coffee) and Culinary offerings (e.g., matching dessert flavors with seasonal beverages, extending consumption scenarios via Light Meals).

  • Manage Revenue & Margins: Set revenue targets and cost breakdowns, taking full ownership of pricing, cost control, sales mix, and profit mix to achieve financial targets.

  • Build Product Matrices: Construct and maintain a dynamic product matrix and price matrix.

  • Oversee Integrated Cost & Purchasing: Establish cost guardrails based on ingredients and Gross Margin (GM) percentages, aligning all planning with monthly sales forecasts.

  • Drive Calendar Management: Oversee the new product calendar management by driving one consolidated monthly calendar.

  • Boost Performance Metrics: Coordinate seasonal features and product rollouts specifically designed to increase Average Ticket (AT) and Average Daily Transactions (ADT).

You are
  • Strategic & Analytical: You rely on data, sales forecasts, and margin breakdowns to make informed decisions about product viability and pricing.

  • Collaborative: You thrive in a "Core Triangle" structure, able to bridge the gap between creative culinary R&D, external partners (OEMs/Vendors), and results-driven marketing.

  • Adaptable and Agile: You can comfortably balance the strategic vision of Global HQ with the localized operational needs of the Korea markets and be able to work with agility.

  • Consumer-Obsessed: You understand guest behavior and how to leverage seasonal calendar moments to drive engagement, transactions, and brand loyalty.

You have
  • 8+ years of experience in Product Management, Menu Strategy, or Category Management within the F&B or premium retail sectors.

  • Proven track record in Vendor Management and collaborating directly with OEMs for product development and commercialization.

  • Proven experience managing financial metrics, including margin management, pricing strategy, and revenue forecasting.

  • Strong cross-functional leadership skills with the ability to navigate matrixed reporting lines (Global HQ and Regional leadership).

  • Deep understanding of product life cycles, from initial R&D concepts and vendor negotiations to marketing rollouts.

  • Native in Korean, Business Level Proficiency in English.
