**Accepting applications for Summer & Fall extern candidates.**


JOB SUMMARY: Join our dedicated and creative culinary team to receive a wealth of knowledge about the culinary arts! Assist the Executive Chef in the preparation of menu items for service and deployment and design of new menu items, production of banquet events, and much more. Skytop Lodge offers a great experience to students looking to further their careers in the baking and pastry field. Externships could result in fulltime positions after graduation.  


REPORTS TO: Executive Chef / Executive Sous Chef 


PRIMARY DUTIES & FUNCTIONS: 

  1. Keep an organized inventory and stock of menu items in all food and beverage outlets. 
  2. Assist in ordering and receiving of raw products 
  3. Help  staff to assure quality execution of all menu products being received by guests.
  4. Demonstrate proper skill set of the culinary arts and techniques.
  5. Check "BEO's" for special functions at the resort.
  6. Rotate, label, and date all items from freezer and walk-in refrigerator on a daily basis.
  7. Ensure your section of the kitchen adheres to all health and safety regulations
  8. Maintain cleanliness and working order of all kitchen equipment.

Requirements

SKILLS REQUIRED: Must be able to use all kitchen equipment and utensils necessary to do the job. Must have a basic understanding of recipes and scaling requirements. Flexible working hours including holidays, nights, early mornings, and weekends. Must be able to effectively communicate with management and staff. 


PRIOR EXPERIENCE:  Must have worked in the field for a minimum of 6 months and enrolled in a hotel restaurant/culinary/baking program at any institution.


SPECIFIC KNOWLEDGE REQUIREMENTS:  Must be knowledgeable in techniques of culinary arts. After training, must have knowledge of sanitation and health regulations as related to food handling.


PERSONALITY REQUIREMENTS:  Ability to work successfully as a team member; dependable, organized, punctual; able to work productively under pressure.


RESPONSIBLE FOR:  Cleaning and maintaining a safe work area, personal hygiene, uniforms (provided by Skytop Lodge), including regulation footwear for the bake shop.


PHYSICAL DEMANDS:  Job requires long hours of standing, and walking throughout shift. Must be able to lift 50 pounds safely and work in high temperature conditions.
