Description:

POSITION SUMMARY:

Reporting to the Commissary Operations Manager this position is primarily responsible for managing daily production including quality, sanitation and safety standards, production planning (including holiday, special occasions and new items), employee training and support of the management team to achieve corporate goals.

ESSENTIAL FUNCTIONS:

  • Manage product quality, investigate and solve quality issues, make recommendations for improvement. Track changes in consistency and quality for continuous improvement.
  • Supervise and train employees on SOP, GMP, HACCP, FDA and Nevada State Department of Health standards for proper food handling and sanitation.
  • Develop and create new products, taking into consideration market trends and corporate strategies. Complete with recipe costing, yields, notification to other departments, ordering of special ingredients, monitor sales trends and adjust as needed.
  • Conducts employee assessments, following up regularly on areas for improvement, and maintaining documentation.
  • Achievement of food cost, labor and sales goals to achieve a positive EBIDTA.
  • Establishes and promotes a work culture where positivity, trust and cooperation are constantly present.

OTHER FUNCTIONS:

  • Other tasks related to commissary bakery production operations as assigned by the Commissary Operations Manager.

Requirements:

QUALIFICATIONS:

Scheduling:

  • Flexible, available any shift, any day

Physical Ability:

  • Must be able to lift up to 50 pounds, push up to 350 pounds
  • Standing/walking up to 6 to 8 hours a day
  • Reaching/bending frequently

Mental Ability:

  • Good decision-making skills (uses independent judgment)
  • Planning/organizational skills
  • Able to calculate baking formulas using bakers percentage; strong math skills
  • Reading, writing, and oral proficiency in the English language required
  • Ability to understand financial data and make appropriate decisions for improvement

Pre-Employment Requirements:

  • Current and Valid Nevada Food Handlerโ€™s Card
  • Servsafe Manager Certification

Environmental Conditions:

  • Able to work in a hot/cold environment
  • Able to work with flour in the environment
  • There are both ambient temperatures and A/C rooms. The ambient temperature can reach at times in the 100โ€™s and the A/C rooms go as low as 50 degrees
  • There are also walk-in chills and freezers where temperatures go as low as minus 10 degrees

Education:

  • High School diploma or GED.
  • Trade school or Technical school diploma (Baking and Pastry)
  • 2 years college preferred

Experience:

  • Minimum of 5 years in the baking industry
  • Minimum 1 year in a management position
  • Retail bakery experience preferred, multi unit or large box store
  • Knowledge and experience with computer skills, email, creating excel or google spreadsheets, Word and Docs.

Desired Skills:

  • Ability to operate various bakery equipment
  • Highly skilled in baking techniques with a variety of yeast doughs, cake decorating, laminated doughs, creams and fillings, individual desserts.
