• Identify daily production needs
• Weigh, mix, round, scale, pan, proof, bake and fry a variety of specialty bakery and pastry items
• Load and unload ovens, cool and de-pan product
• Record ingredient dates and track lot numbers of product used.
• Prepare special orders to ensure guest specifications are met
• Assist packagers as needed to ensure on-time delivery
• Clean and sanitize department including equipment, work areas, containers and utensils
• Follow safe food handling and personal hygiene practices
• Follow safety practices, including Lockout/Tagout of equipment
• Receive, rotate and store department deliveries
• Record all waste to ensure accurate shrink information
• Stay current on food trends and new items relevant to department and building sales
Education, Experience, and Skills:
• High school diploma
• 2 years experience with bakery production operations
• Current certification in food safety required
• Proficient communication and interpersonal skills, including written, verbal and listening skills
• Proficient baking skills, including the ability to follow recipes, work with batters and yeast product, create appealing product and determine product quality
• Proficient cleaning abilities to meet sanitation and visual standards
