At Blueberry Bakery, we take pride in crafting high-quality, handcrafted baked goods using traditional methods and fresh, premium ingredients. From long-fermentation breads and flaky pastries to signature blueberry specialty treats, we bring warmth and sweetness to our community every morning.

Position Overview

We are seeking a reliable, passionate, and detail-oriented Overnight Artisanal Baker to join our production team. In this role, you will be the heart of our morning launch, transforming raw ingredients into fresh, beautifully baked artisan breads, pastries, and house specialties before our doors open.

Key Responsibilities

Mix, Shape & Bake: Prepare a wide range of artisan breads, croissants, scones, muffins, and signature bakery items according to established recipes.

Fermentation & Dough Management: Monitor and manage dough mixing, proofing temperatures, and fermentation schedules to ensure consistent quality and texture.

Oven Operation: Safely operate deck ovens, convection ovens, and proofers, ensuring precise bake times, crust development, and color.

Prep & Finishing: Prepare specialty fillings, fruit glazes, and toppings; glaze, dust, or decorate finished products for display.

Quality Control: Inspect finished baked goods to ensure they meet Blueberry Bakery’s standards for appearance, taste, and consistency.

Cleanliness & Food Safety: Maintain a clean, organized, and sanitary workstation throughout the shift. Adhere strictly to local health standards, food safety protocols, and safe equipment operation.

Inventory & Opening Prep: Track ingredient inventory, notify management of low stock, and organize product racks so the morning retail staff is ready for opening.

Qualifications & Requirements

Experience: Minimum of 1–2 years of experience in commercial baking, scratch-baking, or an artisanal bakery setting (bread and pastry handling preferred).

Skills: Solid understanding of baker’s percentages, dough fermentation, shaping techniques, and commercial oven operation.

Schedule: Ability to work early morning/overnight shifts, weekends, and holidays as required by bakery demand.

Physical Demands:

Ability to stand, walk, bend, and lift up to 50 lbs (e.g., flour bags) regularly throughout an 8-hour shift.

Comfortable working around high temperatures and flour-dusted environments.

Mindset: Strong attention to detail, self-motivated to work independently during quiet night hours, and a team player committed to quality.
