Job description

Job Purpose:

The Kitchen Manager is responsible for managing the entire kitchen production staff, all equipment maintenance and the overall compliance with ACES specifications associated with ACW orders. Additionally, the kitchen manager will participate in the process of directly training, developing and coaching all cooks, Garde manger’s, porters, drivers and vendor-suppliers. The ‘KM’ will serve ACW clients and customers and obtain feedback from all regarding our product and service quality, which they will relay to the General Manager. The kitchen manager will be an on-site leader, creative agent of solution oriented actions in the event of situations arising that require immediate action. The ‘KM’ will make decisions as the coordinator of team efficiency, scheduling, documentation, vendor ordering and directly managing food safety and HACCP compliance following company procedures related to health department and customer satisfaction, safety, and cost.

Responsibilities and Associated Duties:

Under the direction of the General Manager, the Kitchen Supervisor’s primary responsibility is to dynamically Supervise the kitchen staff through clear direction, communication and training/coaching to maximize productivity and quality of work. In addition, the Kitchen Supervisor will organize and orchestrate kitchen staff and operations to achieve the maximum profitability while maintaining ACW Quality, Service & Performance Standards.

Under the direction of the Executive Chef, the Kitchen Supervisor's primary responsibility is to uphold production efficiency, assigned production lists, monitor and audit quality of artistic displays, spec-trays, quality salads, sandwiches, canapés, desserts and sauces – and all hot and cold food preparation, which the Executive Chef directs. The KS supports production of all displays and menu items as required according to Air Culinaire preparation methods as documented on Linkculinaire.com while maintaining Air Culinaire Standards.
