Are you a sushi pro with a sharp eye for quality fish and a knack for leading a team? Do you know your bluefin from your yellowtail and understand what truly fresh fish looks, smells, and feels like? Food People Restaurant Group is on the hunt for an energetic and skilled Commissary Sushi Manager, and yes, this one comes with the schedule you've been dreaming of!


What's Cooking?

As our Commissary Sushi Manager, you'll run our central kitchen, a smaller, focused operation where you and your team prep and deliver fresh fish, ingredients, and menu items to all 8 of our TakoSushi locations. Your expertise with fish, knowing the species, judging the quality, and handling it safely is at the heart of this role. You'll serve as the primary food source for our restaurants, making sure each location gets exactly what it needs, exactly when it needs it, at the freshest quality. It's a full-time, Monday-through-Friday role that promises to be anything but boring!


Your Recipe for Success:

  • Fish Expert First: Be the authority on quality and freshness selecting, inspecting, and approving fish across a range of species so every location serves only the best.
  • Lead a Small, Tight-Knit Team: Work hands-on alongside your commissary crew, guiding prep and delivery while jumping in yourself to keep everything moving.
  • Supply the Family: Serve as the primary food source for our restaurants, prepping and delivering fish and menu items to all 8 TakoSushi locations on a reliable, well-orchestrated schedule.
  • Vendor Virtuoso: Build strong partnerships with fish purveyors and outside vendors to secure the best pricing and the freshest, highest-quality product, because great sushi starts with great sourcing.
  • Master of Logistics: Oversee restaurant ordering and ensure every delivery is smooth, accurate, and timely: no missing tuna, no late shipments, no surprises!
  • Commissary Conductor: Keep the commissary organized and the delivery schedule humming, so the whole operation runs like a well-oiled machine.
  • Communication Champion: Build strong connections with your staff, location managers, and vendors because communication is the secret ingredient to success!
  • Budget Boss: Help us keep labor and food costs within budget while preparing reports that help us shine brighter every day.
  • Safety First: Ensure the safety of our employees is top-notch, because we care about our TakoSushi family!
  • Keep it Clean: Maintain a clean and sanitary commissary environment after all, cleanliness is next to tastiness!
  • Flexibility in Duties: Perform other duties and tasks as assigned or requested because every day in the commissary is a new adventure!

What You Bring to the Table:

  • A minimum of two years of leadership experience in a kitchen, commissary, or production environment.
  • Strong knowledge of fish species, grades, and quality you can identify, inspect, and select fish with confidence.
  • Prior experience with sushi and Asian cuisine.
  • Prior hands-on experience with proper fish handling, storage, and food safety.
  • In-depth knowledge of food safety and sanitation regulations.
  • Experience with vendor relationships, purchasing, and negotiating pricing.
  • Strong organizational and logistics skills, you keep the trains (and the trucks) running on time!
  • A valid driver's license and clean driving record, you'll be behind the wheel making deliveries on occasion!
  • A demonstrated ability to lead and motivate a team.
  • Strong leadership and communication skills that shine even under pressure.

  • A ServSafe certification is a cherry on top!
