About the Role
Spiegelworld is looking for an experienced Restaurant General Manager to lead Superfrico at The Cosmopolitan of Las Vegas. Superfrico is not a conventional restaurant, and we are not looking for a conventional General Manager. This is one of the most unique hospitality leadership opportunities in North America-a business where exceptional food and beverage, immersive entertainment, theatrical service, and operational excellence exist as one seamless guest experience.
As Restaurant General Manager, you are the business leader of Superfrico. You are responsible for defining the culture, setting the standard, driving financial performance, developing future leaders, protecting the guest experience, and continually evolving the operation. You will oversee a team of more than 100 employees while partnering with Spiegelworld's Hospitality, Marketing, Finance, Production, Entertainment, and Resort Operations teams to ensure every guest experiences something they cannot find anywhere else. Success in this role requires equal parts hospitality leader, business strategist, operator, coach, and innovator. This role reports directly to the Executive Director of Hospitality.
What You'll Do
  • Drive the overall vision, culture, strategy, and long-term success of Superfrico, ensuring every decision supports exceptional hospitality, operational excellence, financial performance, and the continued evolution of the brand.
  • Serve as the operational leader of the business, translating the vision of Spiegelworld's ownership and executive team into daily execution while providing strategic feedback that helps shape the future of the concept.
  • Partner closely with the Executive Chef and Beverage Director to provide strategic leadership across the culinary, beverage, and service programs, ensuring menu innovation, product quality, operational execution, team education, and guest experience remain aligned with the creative vision and standards of the Superfrico brand.
  • Build, develop, inspire, and lead a high-performing management team, creating a culture of accountability, ownership, collaboration, and continuous improvement throughout the organization.
  • Actively engage in our antiracist commitment and internal practices by participating in offered learnings, engaging in conversations around Equity, Diversity, Inclusion, and Accessibility, and helping us maintain a safe and welcoming workspace.
  • Recruit, coach, mentor, and develop more than 100 team members, identifying future leaders and creating clear pathways for growth, succession, and long-term career development.

  • Champion world-class hospitality by remaining actively engaged in service, coaching leaders and team members in real time, and ensuring service standards consistently exceed guest expectations.
  • Direct all restaurant, beverage, culinary operations, and ensure seamless collaboration between Entertainment, Production, Resort Operations, and all supporting departments.
  • Think and operate like an owner by driving revenue growth, maximizing profitability, and making strategic decisions that balance exceptional guest experiences with long-term business success.
  • Lead the financial performance of the business by executing approved budgets, optimizing labor and operating costs, managing purchasing and inventory, and delivering profitability in partnership with Spiegelworld Finance, Executive Leadership, and MGM Resort Operations.
  • Analyze financial, operational, and guest experience metrics to identify opportunities, solve problems proactively, and drive continuous improvement across all aspects of the business.
  • Champion the continued evolution of Superfrico by identifying opportunities for operational innovation, service enhancements, programming, and new revenue-generating initiatives that strengthen the guest experience and brand.
  • Ensure every employee possesses a deep understanding of the menu, beverage program, service philosophy, entertainment experience, and brand story through ongoing education, coaching, and development.
  • Develop, implement, and continually refine operating procedures that create consistency while preserving the creativity, flexibility, and spontaneity that define the Superfrico experience.
  • Collaborate closely with Entertainment leadership and Production teams to seamlessly integrate performance and restaurant operations, ensuring every guest experiences an unforgettable visit.
  • Represent Superfrico within the Las Vegas hospitality community by cultivating relationships with resort partners, industry leaders, media, community organizations, and strategic partners while supporting marketing, public relations, and business development initiatives.
  • Maintain exceptional operational readiness through effective staffing, scheduling, planning, routine inspections, inventory management, and resource allocation.
  • Drive communication, accountability, cross-functional alignment, and continuous improvement among restaurant leadership and executive stakeholders.
  • Ensure full compliance with Southern Nevada Health District regulations, company policies, safety standards, licensing requirements, collective bargaining agreements, and resort operating procedures.
  • Perform all responsibilities in accordance with Spiegelworld policies, practices, and standards while embracing additional leadership responsibilities that support the continued growth of the business.
  • Other duties as assigned by your manager.

What You Bring
  • We're looking for an experienced hospitality executive with a proven track record of leading complex, high-volume, experiential hospitality operations.
  • Preferred qualifications include:
  • 10+ years of progressive restaurant leadership experience, with significant experience leading high-volume operations.
    A bachelor's degree in hospitality or hotel/restaurant management is desirable.
  • Experience managing large teams (100+ employees) and developing high-performing leadership teams.
  • Proven ability to drive operational excellence, financial performance, and exceptional guest experiences.
  • Strong financial acumen with experience managing P&L performance, labor optimization, cost controls, forecasting, inventory, and purchasing.
  • Experience leading luxury, lifestyle, experiential, or entertainment-driven hospitality concepts preferred.
  • Experience partnering across culinary, beverage, entertainment, finance, marketing, and resort operations teams.
  • Deep knowledge and passion for food, beverage, wine, cocktails, and hospitality.
  • Experience using hospitality technology platforms, including POS systems, reservation platforms, scheduling tools, inventory systems, and operational reporting platforms.
  • Strong analytical skills with the ability to interpret financial reports, sales data, labor metrics, and operational performance indicators.
  • Proficiency with Microsoft Office Suite, including Excel, and experience utilizing technology to support business decisions.
  • Proven ability to build culture, develop talent, and lead teams in a fast-paced, constantly evolving environment.
  • Strong communication, problem-solving, and relationship-building skills with the ability to collaborate with ownership, executive leadership, partners, and team members.
  • Successful reference check, drug test, and background check clearance prior to hire.
  • Ability to work nights, weekends, holidays, and varying schedules based on operational needs.
  • Must have valid US work authorization.
