About Smyth

Smyth is a three-Michelin-starred restaurant in Chicago's West Loop, helmed by Chefs John Shields and Karen Urie Shields. The tasting menu changes daily with a focus on seasonal product from a national network of farmers, fishermen, foragers, and makers. Our wine program is built in the same spirit, with a strong focus on natural and low-intervention producers from Europe and North America working in the same idiom.

We are looking for a Sommelier to join our team and work with Wine Director Louis Fabbrini and the Captain team on the daily execution of the program.

Position summary

The Sommelier is responsible for wine service in a small, intimate dining room and supports the Wine Director in the day-to-day running of the program. The primary focus is executing the wine pairings each night and guiding guests through bottle and by-the-glass selections. The Sommelier also serves as an ambassador for the program, building relationships with the staff, guests, and visiting industry professionals.

Responsibilities

Service

  • Execute the wine pairings with consistency and warmth during service in tandem with a team of Captains and Frontwaiters
  • Assist guests with bottle and by-the-glass selections, tailoring recommendations to the menu and the table
  • Answer guest questions and contribute to the service
  • Follow responsible alcohol service guidelines

Program support

  • Support the Wine Director in the daily execution of the wine program
  • Participate in monthly inventory and ongoing cellar upkeep
  • Maintain organization and accuracy of the cellar, BTG station, and pairing setups
  • Receive deliveries and contribute to stocking and rotation
  • Participate in staff training and producer tastings
Who we're looking for
  • Hands-on experience working with natural and low-intervention wine, ideally in a fine dining setting
  • A strong working knowledge of the major European and North American regions and the producers driving the natural wine conversation today
  • Real curiosity about emerging regions and producers
  • Service-forward mindset and attention to detail
  • Comfort in a fine-dining tasting menu environment

We value experience working with natural wine and the ability to connect with guests through storytelling over formal certifications. WSET, Court of Master Sommeliers, or equivalent credentials are welcome but not required.

Requirements
  • 2+ years of sommelier experience in a restaurant
  • Available evenings and weekends
  • Ability to lift 50 lbs and stand for extended periods
  • Comfortable with Toast POS, basic spreadsheets, and beverage inventory tools
