We are a leading producer in Michigan of high-quality sausages, committed to delivering delicious and nutritious products to our customers. We are seeking a skilled and experienced Sausage Maker to join our production team at Country Smoke House. The ideal candidate will be passionate about smoking meats, sausage making, competent in operating equipment such as stuffers, grinders, and mixers, and demonstrate a commitment to upholding our company's standards of quality and safety.

Responsibilities:

  1. Operate and maintain sausage making equipment, including grinders,  mixers, stuffers, injectors and casers, ensuring optimal performance and adherence to safety protocols.
  2. Prepare and season meat blends according to established recipes and specifications, ensuring consistency in flavor and texture.
  3. Fill casings with the meat mixture using appropriate techniques to produce uniform sausages with minimal air pockets.
  4. Monitor production processes to maintain product quality, including temperature control, ingredient proportions, and equipment calibration.
  5. Conduct regular inspections of ingredients, equipment, and finished products to ensure compliance with food safety standards and regulations.
  6. Collaborate with the production team to optimize workflow, troubleshoot issues, and implement process improvements.
  7. Clean and sanitize equipment and work areas before and after each production run to prevent contamination and maintain hygiene standards.
  8. Follow standard operating procedures (SOPs) and safety guidelines to minimize risks and promote a safe working environment.
  9. Participate in training sessions and professional development opportunities to enhance skills and knowledge in sausage making techniques and food safety practices.
  10. Assist in the operation of smokehouses.

Qualifications:

  1. High school diploma or equivalent;  or food science degree preferred.
  2. Proven experience as a sausage maker or similar role in a food manufacturing environment.
  3. Strong knowledge of sausage making techniques, including grinding, mixing, stuffing, and casing.
  4. Familiarity with operating equipment such as grinders, mixers, stuffers, and casers.
  5. Understanding of food safety regulations and best practices, including HACCP principles.
  6. Ability to work efficiently in a fast-paced production environment while maintaining attention to detail and quality.
  7. Excellent communication and teamwork skills, with the ability to collaborate effectively with colleagues.
  8. Proper handling of meat items & materials from coolers and freezers.
