Job description

Position Overview We are seeking a skilled and motivated Line Cook to join our culinary team at Sequoia, a premier waterfront restaurant in Georgetown. The ideal candidate has a strong foundation in cooking techniques, thrives in a fast-paced environment, and is committed to consistency, quality, and teamwork. Experience in pasta making is a great addition and highly valued.

Schedule

  • Full-time or part-time positions available
  • Flexible availability required, including evenings, weekends, and holidays
  • Shifts vary based on business needs (lunch, brunch, dinner service)

Key Responsibilities

Station Execution & Consistency

  • Prepare and execute menu items to specifications on assigned station (grill, sauté, pantry, garde manger, pasta, etc.)
  • Maintain speed, consistency, and presentation standards during high-volume service
  • Follow recipes, portion controls, and plating guidelines precisely
  • Communicate clearly with expo and other line cooks to ensure smooth ticket flow

Mise en Place & Prep

  • Complete daily prep lists accurately and on time
  • Maintain organized, well-stocked mise en place throughout service
  • Prepare sauces, stocks, proteins, vegetables, and garnishes according to SOP
  • Assist with pasta production (rolling, cutting, shaping fresh pasta) as needed

Quality & Food Safety

  • Follow all food safety and sanitation protocols (temp logs, FIFO, labeling, hand washing)
  • Monitor product quality and report any issues to Chef or Sous Chef immediately
  • Maintain a clean, organized, and safe workstation at all times
  • Adhere to allergen awareness and cross-contamination prevention practices

Teamwork & Communication

  • Work collaboratively with kitchen team to ensure seamless service
  • Communicate ticket times, needs, and 86'd items clearly and professionally
  • Support other stations during peak volume or as directed by leadership
  • Participate in daily pre-shift meetings and post-shift clean-up

Continuous Learning

  • Take direction and feedback from Chef, Sous Chef, and senior cooks professionally
  • Participate in training sessions, recipe tastings, and skill-building workshops
  • Stay current on menu changes, specials, and seasonal ingredients

Qualifications & Experience

Required

  • Minimum 1–2 years of line cook experience in a restaurant setting (high-volume or upscale dining preferred)
  • Strong knife skills and knowledge of fundamental cooking techniques (sauté, grill, roast, braise, etc.)
  • Ability to work quickly and efficiently under pressure
  • Understanding of food safety standards and proper handling procedures
  • Reliable, punctual, and professional with a strong work ethic
  • Team-oriented attitude and willingness to learn

Preferred

  • Experience in pasta making (rolling, shaping, cutting fresh pasta by hand or machine)
  • Familiarity with Italian, French, or contemporary American cuisine
  • Experience working on multiple stations
  • Culinary school training or apprenticeship experience
  • ServSafe or equivalent food safety certification

Physical Requirements

  • Ability to stand for extended periods (8+ hours per shift)
  • Ability to lift up to 50 lbs (stock pots, supplies, deliveries)
  • Comfortable working in hot kitchen environments
  • Manual dexterity and ability to handle sharp knives and kitchen equipment safely
