Job description

Theo Brothers Bakery — Overnight Bread Baker

Position: Overnight Bread Baker
Schedule: Overnight shift, 10:00 PM – 6:00 AM (hours may vary slightly based on production needs)
Location: Theo Brothers Bakery

About us: Theo Brothers Bakery is a small-batch bakery specializing in artisan breads and classic favorites. We value craftsmanship, consistency, and a team-oriented work environment.

Role summary: We’re hiring an experienced overnight bread baker to run overnight production — mixing, shaping, baking, and finishing loaves and rolls to our quality standards. This is a hands-on role that requires reliability, attention to detail, and the ability to work independently.

Key responsibilities:

  • Prepare doughs and mixes according to recipes and production schedules
  • Mix, bulk ferment, divide, shape, proof, and bake breads and rolls
  • Operate and maintain mixers, proofers, ovens, and other bakery equipment safely
  • Monitor dough/oven temperatures and adjust processes for consistent quality
  • Package finished product and prepare items for morning shift/delivery
  • Maintain a clean, sanitary, and organized work area; follow food-safety and HACCP guidelines
  • Track production quantities and report inventory needs or issues
  • Work cooperatively with the morning/front-of-house team during handoff

Qualifications:

  • Proven bread-baking experience (commercial or artisan bakery) — minimum 1–2 years preferred
  • Strong knowledge of dough handling, fermentation, scaling, and oven management
  • Able to follow recipes and production schedules accurately
  • Physically fit for lifting (up to ~50 lbs), standing for long periods, and performing repetitive tasks
  • Reliable, punctual, and able to work independently overnight
  • Basic math and inventory tracking skills
  • Food safety certification a plus (or willingness to obtain)
