The Overnight Steward worksthrough the night on deep kitchen cleaning, polishing, sanitation, andorganization. This position is responsible for deep cleaning of the ovens,detailing and polishing of the brass and range, power-washing of the floor,cleaning, consolidating, and organizing non-food areas. The overnight porterwill assist with breakdown of the kitchen alongside the cooks. Otherresponsibilities include cleaning and scrubbing of drawers, gaskets, windows,and other areas as designated by the culinary managers. In the absence of theculinary managers, the overnight porter reports to the overnight maintenancetechnician and the bakers with any concerns and to review completed work.

ESSENTIALFUNCTIONS

  • Deep cleaning and sanitation of kitchen.
  • Cleaning of ovens.
  • Scrubbing of burners and grill.
  • Detailed polishing of brass areas and copper equipment weekly.
  • Buffing of countertops as directed.
  • Power washing and deep scrubbing of floor areas.
  • Scrubbing and cleaning of cubbies, dark corners, walls, and other spacesas directed.
  • Dusting lights and sconces.
  • Assisting with polishing of hood in absence of maintenance tech.
  • Consolidation and organization of non-food storage spaces.
  • Assisting cooks with break down and stewards with pot sink at beginningof shift.
  • Additional organization and deep cleaning tasks as directed by culinary managers.
  • Other duties, as assigned.

QUALIFICATIONS

Required

  • A strong work ethic.
  • Independently motivated.
  • Understanding of proper sanitation and usage of cleaning suppliesappropriately.
  • Eye for detail and motivation to maintain all back of house spaces to thestandard held by the establishment.
  • Ability to work weekends.
  • A reliable mode of transportation to and from work.

Desirable

  • Experience in restaurantwork and/or sanitation.
  • Bilingual in English and Spanish.
