Position Summary:

Prepares raw material, trimming to customer specifications, to be cut for orders.

Essential Functions:

  • Works with supervisors and production managers to schedule production.

  • Cleans and trims carcasses for future processing.

  • Inspects meat products for defects, bruises or blemishes and remove

  • Separates meats and byproducts into specified containers and seal containers.

  • Uses knives, cleavers or other equipment to perform trimming.

  • Weighs meats and tag containers for weight and contents.

  • Reduces processing costs but cutting and sizing portions accurately with good yields as well as meeting customer specs.

  • Follows company's detailed product specifications.

  • Performs other duties as assigned

Knowledge / Skills / Abilities:

  • Must have working knowledge of production equipment.

  • Demonstrated ability to trim various cuts of Beef, Pork, Lamb and Veal in an accurate and timely manner.

  • Follows company's Quality Control procedures.

  • Ability to problem solve in terms of trimming and product substitutions.

  • Ability to work in a fast paced, high pressure, challenging environment

  • Must be a team player and possess a positive attitude.

  • Ability to effectively communicate, both written and verbally, in English.
