Overview:
The Cook 1 is a senior culinary professional responsible for the preparation and execution of high-quality cuisine while fostering a "Culture of Care." This role serves as the primary support to the Sous Chefs in daily kitchen management and acts as a technical mentor for junior staff to ensure a pristine and welcoming culinary environment.
Key Responsibilities:
  • Culinary Leadership & Support:
    • Act as a primary support to the Sous Chefs, assisting in the supervision of kitchen operations and administrative tasks.
    • Execute expert-level cooking techniques across all primary stations and mentor Cook 2 and Cook 3 team members.
    • Conduct daily line checks and ensure all mise-en-place meets quality specifications before service.
  • Compliance & Safety:
    • Adhere to all health, safety, and sanitation regulations, including federal OSHA and Hilton brand standards.
    • Obtain and maintain a valid Utah Food Handler Permit as required by local law.
    • Complete Utah Department of Alcoholic Beverage Services (DABS) approved alcohol training (EAS/S.M.A.R.T.) for assist with open-kitchen service or alcohol-infused preparations.
    • Handle chemicals and cleaning agents according to Safety Data Sheets (SDS) and safety guidelines.
  • General Duties:
    • Maintain inventory of food supplies and report replenishment needs.
    • Operate and maintain kitchen equipment safely and effectively.

Qualifications:
  • High school diploma or equivalent is required.
  • Prior experience in a senior line cook or Lead Cook role, preferably within an upscale lifestyle hotel or high-volume environment

Skills:
  • Prior experience working with Hilton or premium lifestyle brands is highly desirable.
  • Exceptional attention to detail and a commitment to high-quality work.
  • Ability to work independently and efficiently, as well as collaboratively within a team.
  • Strong organizational skills and the ability to manage time effectively in a fast-paced environment.
  • Advanced knowledge of professional cooking techniques, knife skills, and food safety protocols.
  • Ability to manage multiple priorities and lead a line team through peak service periods.

Physical Requirements
