The Company:
Epogee is a food innovation company committed to transforming the food system with dramatically lower-calorie ingredients that don't compromise on taste or texture. Our flagship ingredient, EPG (esterified propoxylated glycerol), is a patented fat alternative with 92% fewer calories than traditional fats.

Backed by 60+ clinical studies and full GRAS status across major food categories, Epogee is scaling rapidly with top-tier manufacturing partners, regulatory support, and a growing customer base across CPG and foodservice.

Note: Epogee is a subsidiary of Linus Technology. David is another brand operating under Linus Technology. While this role will be listed through David's hiring channels, the Associate Application Scientist will operate exclusively within Epogee's team, leadership, and mission.

Role:The Associate Application Scientist will sit within Epogee's R&D team and play a key role in both benchtop chemical synthesis and food application development for esterified propoxylated glycerol (EPG).

This is a hands-on laboratory role. The majority of your time will be spent synthesizing, formulating, testing, troubleshooting, and refining EPG and related products.

You will help drive early-stage innovation at the benchtop level-from synthesizing new variants of EPG to prototyping novel food products and evaluating ingredient interactions across a range of food applications.

Responsibilities:

Support laboratory-scale synthesis of EPG (~50%)

  • Conduct lab-scale synthesis reactions such as esterification and distillation
  • Execute and refine experimental protocols for EPG production and modification
  • Explore new molecular structures and synthesis approaches to improve functionality and performance of EPG
  • Document experimental results and contribute to ongoing process development

Develop benchtop food applications (~50%)

  • Formulate and prototype new food products using EPG
  • Evaluate ingredient functionality across various food systems
  • Conduct organoleptic evaluation, stability testing, and shelf-life testing
  • Troubleshoot formulations and iterate quickly to optimize performance

Maintain a safe and organized laboratory environment

  • Uphold strict laboratory safety standards and protocols
  • Maintain organized documentation, materials, and experimental records
  • Contribute to a culture of safety and operational excellence within the lab

Operate effectively in a fast-paced R&D environment

  • Manage multiple experimental work streams simultaneously
  • Adapt quickly as research priorities evolve
  • Maintain strong organization and clear differentiation between projects

Requirements

  • BS or MS in Food Science, Chemistry, Materials Science, Chemical Engineering, or a related field
  • 1-3 years of experience working in a laboratory setting, ideally with exposure to food benchtop applications and/or chemical synthesis or reaction chemistry
  • Ability to work effectively in a lab environment while upholding strict safety standards
  • Meticulous attention to detail and strong experimental discipline
  • A self-starting mindset and enthusiasm for executing on ideas quickly
  • Strong written and verbal communication skills, with the ability to clearly summarize scientific results and insight

Note: The role will be based in person in South Carolina for approximately 2-3 months before ultimately being relocated to New York City.
