Our corporate teams support restaurant operations through strong systems, sound processes, and a shared commitment to doing things the right way.

Position Summary

The Legal Administrator supports the Legal Department's work across insurance claims and risk management, new store development, and legal project management. Reporting to the General Counsel, this role provides the administrative backbone for claims handling, litigation coordination, contract tracking, and legal project support across the organization.

Essential Functions

In this role, you will:

Insurance Claims & Risk Management

•     Manage insurance claim reporting, file and document management, and process administration for third-party liability and property-damage claims

•     Review incident reports, conduct additional investigation with operations team members, review and download footage from store surveillance systems, and prepare fact summaries and timelines

•     Coordinate with General Counsel, insurance claim administrators, and external legal counsel on matters in active litigation, including managing payment of provider invoices, tracking legal fees, and ensuring discovery responses and review requests are fulfilled on a timely basis

•     Maintain current and accurate case files in the Legal Department's matter management system

•     Work to recover losses from insurance carriers or responsible third parties, when applicable

•     Help continually improve department processes by leveraging existing tools and exploring and testing new technology, including AI-powered solutions

Legal Project Management

•     Support the General Counsel with maintaining current contract records, responding to requests for contract approvals, renewals, or amendments, and tracking general legal advice requests

•     Provide administrative assistance for in-house real estate development projects, including tracking deadlines for contract drafting and negotiation

•     Assist with other legal department projects as needed

Preferred Qualifications

•     Prior experience in a legal administration, paralegal, claims administration, or risk management support role

•     Strong organizational skills with the ability to manage multiple case files, deadlines, and projects simultaneously

•     High attention to detail and accuracy in document management and reporting

•     Discretion and sound judgment in handling confidential and sensitive information

•     Strong written and verbal communication skills

•     Proficiency with Microsoft Office (Word, Excel, Outlook) and comfort learning matter management or claims administration software

•     Ability to work independently, prioritize competing demands, and follow through on multi-step processes

•     Interest in leveraging new tools and technology, including AI-powered solutions, to improve department workflows

Scheduling Expectations

This is a full-time, on-site position based at the Sizzling Platter corporate office in Salt Lake City, UT.

•     Standard business hours, Monday through Friday

•     Occasional flexibility may be required to meet claims, litigation, or project deadlines

Compensation

Pay Range: $22.00 – $27.00 per hour

Actual compensation will vary based on factors such as experience, skills, qualifications, location, and business needs.
