Job Description

Purpose: Ensure proper training and supervision of all personnel, to deliver prompt, courteous service in a manner that complies with Novotel Miami Brickell Food and Beverage standards and company policies and procedures. 

Reports to: F&B Manager

Essential Functions: 

  • Responsible for assigned shift, assisting in overall management. 
  • Supervise and coordinate assigned shift. 

  • Assist in overall supervision of the department as outlined. 

  • Check staff punctuality. 

  • Check that staff is in compliance with the grooming standards.  

  • Complete environmental checklist for dining room, lobby bar, In-Room Dining and Pool Bar. 

  • Spot check liquor pars. 

  • Order daily supplies. 

  • Hold pre-shift meetings. 

  • Follow up on established training steps. 

  • Handle guest comments and complaints. 

  • Ensure guest satisfaction. 

  • Stay on the floor during peak hours. 

  • Communicate with guests and receive feedback. 

  • Observe, teach, and correct staff's service. 

  • Monitor each guest experience. 

  • Examine food preparation. 

  • Examine beverage presentation. 

  • Handle any guest complaint. 

  • Assist with IRD when required 

  • Assist with Minibar when required 

  • Assist with any food and beverage front of the house position when business requires. 

  • Check set up and cleanliness of the outlets 

  • Review amenities and door knob orders and provide the information to the culinary team 

  • Check the liquor room cleanliness and make sure to the FIFO has been done 

  • Receive orders of  juices, dairy, liquors and wine and make sure are placed inside of the liquor room organized and following FIFO 

  • Walk by the outlet's public areas such as Uva patio, pool deck, restrooms and make sure all guests are taken care of and check for cleanliness and address any issue if applicable 

  • Ensure minibar attendant completed the charges report and turn it to the front desk on or before 1 pm 

  • Complete F&B report  

  • Communicate with culinary team for any 86 item and address to the front of the house team 

Essential Functions: 

  • Maintain condition of F&B Outlets. 

  • Administrative responsibilities. 

  • Assist manager in: Scheduling, forecast, inventories, and completing payroll. 

  • Participate in interviewing candidates for open positions within the F&B department. 

  • Prepare maintenance requests and follow-up. 

  • Complete other assigned duties. 

  • Cost control. 

  • Monitor food and liquor requisitions and complete the replenish on the outlets. 

  • Monitor food waste. 

  • Monitor labor and payroll costs. 

  • Check bar controls, shot glass use, red lining, and bottles totally empty. 

  • Must be familiar with and adhere to all liquor liability laws: 

  • Dram Shop Act - Prohibiting the sale/service of alcohol to intoxicated guests. 

  • Prohibiting the sale or service of alcohol to minors. 

  • Must know emergency procedures (including CPR) and work to prevent accidents. 

  • Perform any other duties assigned by management. 

Hotel Specific Essential Functions: 

  • Ability to work as a server, bartender, host, IRD server or minibar attentand to cover shifts as needed. 

  • Ability to lead by example. Prepare and conduct disciplinary situations with Heartists 

  • Ability to communicate clearly with all departments, being proactive to resolve issues. 

  •    Ability to solve guest problems, recover the guest and create an amazing experience. 

  •    Ability to open and close all outlets, to include the closing of the Heartists' banks.
