Job description

Performing routine temperature checks, documenting results, and ensuring food safety by rapidly cooling products within specific time and temperature parameters. The role involves operating in blast chillers and/or coolers. Key responsibilities include verifying that temperatures are within food safety guidelines, recording data for audit purposes, problem-solving, and taking corrective action if temperatures are outside of the acceptable range. 

What you will do… 

  • Use calibrated thermometers to check the internal temperature of food during the blast chilling process to ensure it reaches the target temperature within the required time frame.
  • Maintain detailed and accurate records of temperature and time data for all products being chilled. This documentation is crucial for food safety audits and quality assurance.
  • Guarantee food safety by confirming that rapid cooling prevents bacterial growth, keeping food out of the "temperature danger zone" ( 40° to 140°).
  • Conduct visual quality control checks on the product, including reviewing ingredients, texture, and appearance, in addition to temperature monitoring.
  • Safely and efficiently operate blast chillers and other related equipment according to standard operating procedures.
  • Follow strict hygiene and sanitation protocols to ensure the cleanliness of the equipment and the surrounding work area to prevent contamination.
  • Take immediate corrective action if a temperature reading is outside of the acceptable range, such as placing the product back in the blast chiller or following other established procedures.
  • Report any equipment malfunctions, temperature deviations, or other hazards immediately to a supervisor.

  • Currently possess and maintain food handler certifications for local municipality
  • Understanding of food safety standards, regulations, and HACCP principles is essential
  • Meticulous attention to detail is needed for accurate temperature checks and record-keeping.
  • Comfortable using digital scales and timers during production
  • Must be able to perform duties that require standing for long periods of time and fast movement
  • Ability to multi-task and handle multiple priorities during the shift
  • The ability to communicate effectively with team members and supervisors about any issues is important.

  • Flexible to work on other duties outside of your main responsibilities when needed and as assigned
  • Must be able to work in a chilled environment that is maintained below 40° 
  • Adhere to all GMP, safety and sanitation standards
  • Ability to stand, stoop, kneel, wipe, reach, bend and lift.
  • Subject to lifting up to 50lbs
  • Exposure to some potential food allergens such as shrimp, soy, nuts/nut products, and sesame. 
  • The ability to communicate effectively with team members and supervisors to manage workflow and report issues.
