Description:
The Pepper's Pizzeria Kitchen Manager will be directly responsible for all culinary production and assist the location General Manager in carrying out the company's culinary vision; estimate food consumption and requisition or purchase food; select and produce recipes; standardize production recipes to ensure consistent quality; establish presentation technique and quality standards; assist in planning and pricing menus; ensure proper equipment operation/maintenance; and ensure proper safety and sanitation in kitchen.
The Kitchen Manager may cook selected items or for selected retail occasions. The Kitchen Manager directly / indirectly supervises kitchen personnel with responsibility for training, mentoring, and executing designed menus / dishes. Work directly with location General and Area Managers, Event Planner / Service Manager and Director of Operations to achieve goals.
Summary of Duties & Responsibilities:
Our managers are dynamic individuals that fill many roles: Manager, Leader, Trainer, Mentor. Following is an overview of general job duties and responsibilities:
  • Fully understand the company's brand, vision, and mission statement and apply those concepts to daily decisions and activities.
  • Understand completely all policies, procedures, standards, specifications, guidelines, and training programs.
  • Executes company's culinary vision through creative and cost-effective menu development, standardized purchasing, recipes, and production methods.
  • Focus on retail production and day to day support of Culinary Operations of Pepper's Pizzeria.
  • Work with General Manager, Owners, and Managers as needed to facilitate organized planning and execution of all restaurant and private events.
  • Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking, and serving standards.
  • Ensure that all food and goods on hand are purchased, stored, and used in the most efficient manner to minimize waste and keep cost of goods as low as possible.
  • Work with Managers to make employment decisions including interviewing, hiring, evaluating, promoting and mentoring / goal setting culinary personnel as appropriate.
  • Provide orientation of company and department policies and procedures and oversee training of new kitchen employees. Work with culinary staff to ensure proper mentoring and training.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Prepare all required paperwork, including forms, reports, and schedules in an organized and timely manner.
  • Ensure that all equipment and facilities are kept clean and kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
  • Work with Executive Chef and Managers to implement changes in menu products. Ensure portion sizes and train staff on use of standard recipe cards for all new menu items.
  • Ensure that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with the restaurant's receiving policies and procedures.
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures.
  • Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis.
  • Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
  • Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for all violations of company policies and procedures.
  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees, and guests.
  • Always show initiative towards company and personal development.
  • Aid and support Executive Chef and Managers as needed.
  • Must have a valid Serv-Safe Food Safety Manager Certification
  • Must complete management orientation & certification processes and be knowledgeable in management policies and procedures manual.

Requirements:
Qualifications:
  • At least a high school diploma
  • Previous restaurant experience
  • Prior work as a manager or supervisor
  • Success with customer service
  • Training in food safety
  • Experience with long shifts
  • Financial literacy
  • Ability to keep inventory organized
  • Have knowledge of food and beverage service, generally involving some experience in the industry.
  • Possess excellent basic math skills and can operate a cash register or POS system.
  • Possess basic computer related skills.
  • Possess the highest standards for personal appearance and attitude.
  • Be able to work on your feet at a high energy level for long periods of time.
  • Must have stamina to work 50+ hours per week.
  • Must have proficient skills in: Personnel Management, Planning, Fostering Teamwork, Giving Feedback, Customer Service, Resolving Conflict, Verbal Communication, Multi-tasking - Must be Self-Motivated Individual with vision for the future.
