ABOUT THE ROLE: The Food & Beverage Director leads all food, beverage, and culinary operations at Lakeside Hotel Casino, including the restaurant, coffee shop, casino bars, banquets, and kitchen. This role sets direction, delivers financial results, develops leaders and teams, and ensures compliance with company policies and State Health Department regulations.

WHAT YOU WILL DO:

Leadership

  • Provide clear direction and accountability for the Food & Beverage and Culinary teams and model excellent service.
  • Set goals aligned to business strategy and drive consistent execution.
  • Build trust and collaboration across outlets and partner departments.
  • Lead by example with integrity, sound decisions, and strong communication, including pre-shift briefings and team meetings.

Financial and Operations

  • Build and manage the F&B budget to achieve or exceed financial goals.
  • Review performance, identify issues, and implement corrective actions.
  • Improve revenue, margins, and efficiency while protecting guest and team member satisfaction.
  • Oversee cash controls, liquor controls, and regulatory compliance.
  • Recommend capital improvements and equipment needs.

People and Culture

  • Select, develop, and retain a high-performing leadership team.
  • Coach and mentor leaders and staff, set standards, provide regular feedback, and hold teams accountable.
  • Promote fair and equitable treatment and an inclusive workplace.
  • Partner with Human Resources on employee relations and performance.

Guest Experience

  • Ensure exceptional service in every outlet, every shift.
  • Empower employees to anticipate and resolve guest needs.
  • Monitor service delivery and provide coaching to elevate performance.
  • Track market trends and bring forward new concepts, products, and experiences.

Administration and Compliance

  • Share timely, relevant information with executives, peers, and teams.
  • Analyze data to inform decisions.
  • Oversee purchasing, forecasting, and inventory for food, liquor, wine, and supplies.
  • Ensure compliance with company policies, state and local regulations, and health department standards.
  • Serve periodically as Manager on Duty, supervising overall casino operations while on shift.

SUPERVISORY SCOPE: Manages all property food and beverage outlets and leadership. Duties include interviewing, scheduling, maintaining accurate time and attendance records for payroll submission, training, assigning work, performance appraisals, documentation, discipline, and resolving complaints in line with company policies.

WHAT WE’RE LOOKING FOR

  • Bachelor’s degree or 5–7 years of related leadership experience, or a mix of education and experience.
  • Proven management/leadership experience in multi-outlet F&B operations.
  • Strong English communication skills, including presenting to groups.
  • Intermediate math skills for discounts, percentages, forecasting, and cost analysis.
  • Proficiency with Microsoft Office.
  • Ability to work a flexible schedule, including nights, weekends, and holidays as needed.
  • Ability to obtain and maintain an Iowa Racing and Gaming Commission license.
  • Valid driver’s license.
  • Casino or gaming-resort experience preferred.
  • Experience with InfoGenesis preferred.
