Kitchen Manager

Summary:  

The Kitchen Manager supports the manager of a restaurant with medium sales volume and moderately complex kitchen and culinary operations and is responsible for day-to-day supervision of and assignment of work to non-management associates.  This position is also responsible for implementing kitchen and culinary changes, as well as performing all other responsibilities as directed by the business or assigned Management of which associate is capable of performing.   

 This is an exempt position and typically reports to the Restaurant Manager, depending on local requirements.  

 Essential Functions: 

  • Ensures on a daily basis that the kitchen is staffed appropriately, the kitchen is clean, inventory levels are appropriate, and equipment is working properly 
  • Supervises the day-to-day activities of kitchen staff and assigns responsibilities for specified work 
  • Continually monitors and updates prep, par and pull sheets 
  • Trains cooks and prep cooks 
  • Ensures recipe compliance and completes self-inspection reports 
  • Ensures expediting is performed correctly  
  • Maintains planograms for walk-ins 
  • Identifies hiring, firing, advancement, promotion or any other associate status change needs of the kitchen staff 
  • Complies with company and franchise standards of operation procedures, as well as those of all applicable regulatory agencies, and ensures on a daily basis that all products are prepared and presented in accordance with brand or company standards 
  • Provides the highest quality of customer service to the customers at all times, to include ensuring the proper training of all staff and supporting associates to ensure customer satisfaction and product quality 

 Minimum Qualifications, Knowledge, Skills, and Work Environment:  

  • Requires a High School diploma or general education development (GED) diploma; Inter-Provincial Red Seal certification in cooking preferred; brand certification a plus 
  • Requires 2 or more years of job-related experience in medium volume and/or multi-unit kitchen operations; 3 or more years preferred 
  • Demonstrates knowledge of product, customer service, services and quality standards required, equipment and operations standards required 
  • Demonstrates team management, delegation, issue resolution, coaching skills and ability to motivate others and act as a change agent 
  • Demonstrates organization and multi-project time/issue management  
  • Requires the ability to speak, read and comprehend instructions, short correspondence and policy documents, as well as converse comfortably with individuals

Ce poste implique egalement la mise en uvre des changements relatifs a la cuisine et aux operations culinaires, ainsi que l'execution de toute autre responsabilite demandee par la direction de l'entreprise ou par le personnel d'encadrement designe, dans la mesure des capacites de l'employe.

Il s'agit d'un poste de cadre (exempte des heures supplementaires) qui releve generalement du Gerant du restaurant, selon les exigences locales.

Fonctions essentielles :

S'assure quotidiennement que la cuisine dispose d'un effectif adequat, qu'elle est propre, que les niveaux d'inventaire sont appropries et que l'equipement fonctionne correctement.

Supervise les activites quotidiennes du personnel de cuisine et attribue les responsabilites pour des taches specifiques.

Surveille et met a jour en permanence les fiches de preparation, les niveaux de stock de reference (par) et les fiches de sortie de stock.

Forme les cuisiniers et les commis de cuisine.

Veille au respect des recettes et remplit les rapports d'auto-inspection.

S'assure que l'envoi des plats (expediting) est effectue correctement.

Gere les planogrammes pour les chambres froides.

Identifie les besoins en matiere d'embauche, de licenciement, d'avancement, de promotion ou de tout autre changement de statut du personnel de cuisine.

Se conforme aux normes de procedures operationnelles de l'entreprise et de la franchise, ainsi qu'a celles de tous les organismes de reglementation applicables ; s'assure quotidiennement que tous les produits sont prepares et presentes conformement aux normes de la marque ou de l'entreprise

Offre en tout temps un service a la clientele de la plus haute qualite, notamment en veillant a la formation adequate de tout le personnel et en soutenant les employes afin de garantir la satisfaction de la clientele et la qualite des produits.

Qualifications minimales, connaissances, competences et environnement de travail :

Exige un diplome d'etudes secondaires ou un diplome de developpement de l'education generale (GED) ; la certification interprovinciale Sceau rouge (Red Seal) en cuisine est privilegiee ; une certification propre a la marque constitue un atout.

Exige au moins deux ans d'experience professionnelle pertinente dans des operations de cuisine a volume moyen et/ou au sein d'etablissements multiples (multi-unites). 3 ans d'experience ou plus souhaites

Demontre une connaissance des produits, du service a la clientele, des services offerts, des normes de qualite requises, ainsi que des equipements et des normes operationnelles exiges

Demontre des competences en gestion d'equipe, en delegation, en resolution de problemes et en accompagnement (coaching), ainsi que la capacite a motiver autrui et a agir comme agent de changement

Demontre des aptitudes en organisation et en gestion simultanee du temps et des problemes lies a des projets multiples

Necessite la capacite de parler, de lire et de comprendre des instructions, de la correspondance breve et des documents de politique, ainsi que de converser aisement avec diverses personnes
