Galley Manager information

What is a galley manager?

Galley Managers are responsible for overseeing the operations of a ship’s kitchen, or galley, ensuring that food is prepared safely, menus are planned, and supplies are managed efficiently. They supervise kitchen staff, maintain hygiene standards, and coordinate meal service according to the vessel’s schedule. Galley Managers also handle inventory, budgeting, and compliance with health and safety regulations to provide nutritious meals for crew and passengers on board.

What are some common challenges faced by a galley manager and how can they be effectively addressed?

A Galley Manager often faces challenges such as coordinating meal preparation for large groups with diverse dietary needs, maintaining strict food safety standards, and managing inventory in often limited storage spaces. Effective time management and clear communication with kitchen staff are essential to ensure smooth operations, especially during peak meal times. Building strong relationships with suppliers and staying organized with inventory tracking can help prevent shortages and waste, while regular training ensures that all staff adhere to safety protocols.

What is the difference between Galley Manager vs Kitchen Supervisor?

The Galley Manager primarily oversees food service operations on ships, focusing on maritime safety and efficiency, while the Kitchen Supervisor manages daily kitchen activities in land-based hospitality settings. Both roles require culinary skills and food safety certifications but differ in environment and scope.

What are the key skills and qualifications needed to thrive as a galley manager?

To excel as a Galley Manager, you need expertise in food preparation, inventory management, and compliance with health and safety regulations, often backed by culinary training or relevant certifications. Familiarity with kitchen equipment, food safety management systems, and ordering software is typically required. Strong leadership, organizational, and communication skills help ensure smooth operations and effective team coordination. These competencies are vital for maintaining high-quality meal service, cost control, and a safe, efficient galley environment.

Job description

Responsibilities
CVN Mechanical Specialist - Galley, Laundry & Auxiliary Systems
CEMAT | Commander Naval Air Forces Atlantic (CNAL) | Norfolk, VA
The CVN Mechanical Specialist will serve on the Carrier Engineering Maintenance Assist Team (CEMAT), providing hands-on mechanical troubleshooting, maintenance support, and on-the-job training to ship's force personnel aboard CVN-class aircraft carriers. This role focuses primarily on galley, scullery, and laundry equipment; diagnosing and repairing the mechanical systems that directly support crew quality of life and operational readiness. This is a hands-on, deck-plates position, not a desk job. You'll be the go-to expert helping Sailors keep critical quality-of-life equipment running. If you spent your Navy career keeping the galley gear and laundry machines turning, this role is for you.
What You'll Do
  • Troubleshoot and repair shipboard galley and scullery equipment (commercial dishwashers, garbage disposals, steam kettles, ovens, mixers) and laundry systems - pumps, valves, bearings, seals, drive assemblies, and mechanical controls.
  • Provide over-the-shoulder coaching and OJT to ship's force Sailors, building their ability to independently maintain and troubleshoot auxiliary mechanical equipment.
  • Deliver maintenance support and engineering guidance for AC&R systems supporting galley and hotel services spaces.
  • Interpret mechanical diagrams, technical manuals, piping schematics, and NAVSEA documentation to support troubleshooting and repair efforts.
  • Collaborate with Fleet Maintenance, Systems Engineering, and QA/QC teams to support equipment readiness and sustainment.
  • Document maintenance actions and support compliance with JFMM and NAVSEA Standard Items.

#nowhiring
Required Qualifications
  • Education: Bachelor's degree or Associate's degree + 6 years of experience
    • OR a High School diploma + 8 years
      • Quantified, specialized skills such as trade qualifications, manufacturer certifications of training for shipboard related systems, equipment and components may be substituted for up to two (2) years of technician experience for each major qualification or specialized trade skill.
  • Shipboard Background: Prior U.S. Naval service with direct A-Division (Auxiliaries) experience (preferably aboard CVN-class carriers or surface combatants). Should also have experience in a team leader or supervisor role.
  • Technical Skills:
    • Troubleshooting of galley, scullery, and laundry equipment - pumps, motors, valves, seals, bearings, mechanical drive systems
    • Familiarity with AC&R systems (nice to have)
    • Ability to read and interpret mechanical diagrams, piping schematics, and technical manuals
  • Clearance: Active SECRET clearance required
  • Citizenship: U.S. Citizenship required
  • Physical: Ability to lift 50 lbs and work in shipboard/industrial environments (ladders, confined spaces, elevated temperatures)

Desired Qualifications
  • NEC certifications in auxiliary, mechanical, AC&R, and laundry/galley systems/equipment
  • Familiarity with NAVSEA Standard Items, JFMM, and maintenance planning systems
  • Proficiency with Microsoft Office Suite, including Excel and PowerPoint
  • Experience mentoring or training junior personnel

Ideal Navy Backgrounds
We strongly encourage applications from veterans with the following ratings:
  • Machinist's Mate (MM) - especially with A-Gang / Auxiliaries experience
  • Engineman (EN)
  • Gas Turbine Systems Technician - Mechanical (GSM)
  • Aviation Mechanic

Or equivalent experience maintaining shipboard galley, scullery, laundry, or auxiliary mechanical equipment.
