BREAKFAST COOK at Destination Geneva National
Located inside Destination Geneva National's sprawling 56,000-square-foot Clubhouse, turf smokehouse and Member Tap Room offer panoramic golf course and lake views and a Tex-Mex inspired menu for indoor, outdoor and to-go dining. As Breakfast Cook, you will play a vital role in preparing and delivering exceptional breakfast offerings out of the singular kitchen serving both the Memberโ€™s side (Member Tap) and resort/public side (turf).
ESSENTIAL FUNCTIONS
Primary responsibilities include, but are not limited to the following:
  • Prepare a variety of dishes including breakfast tacos, croissant sandwiches, pancakes, oatmeal, bacon, smoothies, and other breakfast items, following established recipes and presentation standards. Also prep for lunch service, including chili and the daily soup special.
  • Ensure the freshness, quality, and consistency of all breakfast offerings.
  • Coordinate with the restaurant team to efficiently execute breakfast service and meet guest expectations.
  • Utilize proper cooking techniques and methods to achieve optimal flavor, texture, and presentation of breakfast dishes.
  • Monitor cooking times, temperatures, and plating to ensure accurate and timely delivery of breakfast orders.
  • Coordinate with other kitchen staff to synchronize the preparation of multiple dishes and maintain a smooth breakfast service flow.
  • Follow all food safety and sanitation guidelines, including HACCP and local health regulations, to maintain a safe and clean breakfast kitchen environment.
  • Properly handle, store, and rotate food products (using FIFO) to ensure freshness and prevent cross-contamination.
  • Maintain cleanliness and organization of workstations, equipment, and storage areas.
  • Ensure that all breakfast dishes meet or exceed the resort's standards for taste, presentation, and portion sizes.
  • Apply artistic and creative touches to enhance the visual appeal of breakfast plates.
  • Collaborate with the culinary team to maintain consistency in breakfast presentation and taste across all dishes.
  • Work collaboratively with the breakfast team to ensure efficient breakfast service.
  • Communicate effectively with other departments to facilitate smooth operations and guest satisfaction.
  • Assist and support other kitchen staff (including in other resort/hotel ktichens) as needed, fostering a positive and cohesive work environment.
QUALIFICATIONS amp; REQUIREMENTS
  • Previous experience as a cook or breakfast cook in a high-end restaurant or hotel setting is preferred.
  • Solid understanding of breakfast culinary techniques, including egg cookery, pastry preparation, and breakfast item execution.
  • Knowledge of food safety and sanitation practices, with the ability to adhere to guidelines and maintain cleanliness in the kitchen.
  • Ability to work in a fast-paced environment, prioritize tasks, and meet breakfast service deadlines.
  • Attention to detail and commitment to delivering high-quality breakfast dishes.
  • Strong teamwork and communication skills.
