Job description

Ongoing Temporary Assignment


We are seeking a skilled and passionate Sushi Chef to join our culinary team. In this role, you will be responsible for preparing authentic sushi dishes with precision and artistry, ensuring high-quality presentation and flavor. The ideal candidate will bring expertise in Japanese cuisine, a strong sense of creativity, and a commitment to delivering exceptional dining experiences. This position offers an opportunity to showcase your culinary talents in a vibrant, fast-paced environment dedicated to excellence.


Responsibilities

  • Prepare a variety of sushi, sashimi, and other Japanese dishes according to established recipes and standards
  • Maintain the highest standards of hygiene, safety, and cleanliness in the kitchen
  • Source fresh ingredients and ensure proper storage to uphold quality and freshness
  • Collaborate with kitchen staff to coordinate meal preparation and presentation
  • Develop new sushi recipes and presentation techniques to enhance menu offerings
  • Monitor inventory levels of ingredients and place orders as needed
  • Ensure consistent portion control and presentation standards for all dishes
  • Adhere to food safety regulations and sanitation procedures at all times
  • Train junior kitchen staff on sushi preparation techniques and safety protocols
  • Assist in menu planning and contribute ideas for seasonal or specialty items

Experience

  • Proven experience as a Sushi Chef or in a similar role within Japanese cuisine or fine dining establishments
  • Extensive knowledge of sushi preparation, knife skills, and ingredient handling
  • Experience working with various culinary tools, including sushi knives, rice cookers, and presentation utensils
  • Familiarity with food safety standards and sanitation practices relevant to sushi preparation
  • Ability to work efficiently in a high-pressure environment while maintaining attention to detail
  • Experience sourcing fresh seafood and produce from reliable suppliers
  • Prior experience mentoring or training kitchen staff is preferred
  • Knowledge of culinary arts related to Japanese cuisine, including traditional techniques and modern innovations
