As a member of the hotel Executive Committee, the Executive Chef is a highly visible role with exposure to Senior and Corporate leadership. This position reports to the hotel General Manager.

The Executive Chef will be responsible for kitchen operations including menu planning, provisioning, food preparation, and sanitation. This position directs the training of culinary staff and other kitchen workers engaged in preparing and cooking foods to ensure an efficient and profitable food service. The position demands creativity on a daily basis, excellent communication skills, and the ability to maintain the highest of culinary standards. The Executive Chef works well under pressure, is organized, flexible, self-motivated and is willing to work long hours.

Duties include:

  • Develop and implement the culinary vision for the organization, including menu development, recipe creation, food presentation, food description cards.
  • Train and manage a team of cooks and kitchen staff, ensuring compliance with all Hyatt and State safety and sanitation regulations.
  • Oversee food preparation and cooking activities to ensure quality and consistency of dishes.
  • Utilizing, following and implementation of Hyatt best practices systems for cost control and food quality standards, menu costing and menu analytic oversight
  • Stay up to date on trends in the culinary industry and incorporate them into menu planning, while keeping menus seasonally appropriate
  • Participate in creating, implement of F&B Sales driving marketing programs to increase businessand broaden customer base.
  • Coordinate food production schedules to meet demands, considering factors such as events, holidays, and special occasions.
  • Manages a daily product quality control check list for all meal periods. (line checks)
  • Management of evolving par systems for inventory and daily needs, while being aware and maintaining budgeted goals.
  • Provide direction & guidance to purchasing & receiving department.
  • Develops full comprehension and utilizes Hyatt's S.O.P.systemsto include Birchstreet, Kronos and Avendra program, but not limited to.
  • Work with suppliers and through Avendra to negotiate contracts and secure the best possible prices for ingredients and other necessary supplies.
  • Develop cost-effective methods for reducing waste and maximizing efficiency.
  • Evaluate new products and equipment to determine if they will improve operations.
  • Conducting regular research and develop relationships with local farmers and purveyors of sustainable and organic foods.
  • Implement New Hire Training and Onboarding for all culinary colleagues.
  • Monitoring food costs and inventory levels to ensure that the restaurant or hotel is meeting profit goals.
  • Works in conjunction with restaurant leadership on F&B goals for the property.
  • Shows and demonstrates accountability, clear precise communication and professionalism.
  • Ensuring that food preparation meets health codes and standards by conducting regular inspections of the kitchen facilities, storage areas, and equipment used in the preparation process.
  • Developing and working in conjunction with special events teams to develop events menus held at the restaurant or hotel such as weddings or corporate dinners.
  • Maintains current recipe cards, food descriptions and costing for all menus.
  • Overseeing employee cafeteria and standards.
  • Maintains ongoing FOH culinary training material, to include testing, food shows, and staff tastings to drive Forbes 5 Star recognition.
  • Validates and approves weekly schedules per Hyatt standards.
  • Conducts and or participates in weekly meetings with F&B team to establish weekly/monthly goal.

Qualifications

Must possess the following strengths: high energy, entrepreneurial spirit, motivational leader, proven track record in high volume property, effective communicator, effective in providing exceptional customer service and associate relations, and ability to improve the bottom line.

  • Demonstrated ability to effectively interact with people of diverse socioeconomic, cultural, disability, and ethnic backgrounds

6 years or more of progressive/luxury hotel F&B experience.

  • At least 4 years’ experience in a senior role in a culinary environment
  • Clear concise written and verbal communication skills in English.
  • Must be proficient in Microsoft Word and Excel
  • Must have excellent organizational, interpersonal and administrative skills
  • Maintain communications with Corporate Staff
