Job Summary

The Catering Executive Sous Chef oversees the culinary execution of Butler University's catering and events program, supporting a diverse portfolio of campus events at venues including Hinkle Fieldhouse, Butler Arts & Event Center, and other university locations. This role partners closely with the Director of Catering to lead production, develop culinary talent, and deliver exceptional food quality and hospitality across all catered events.

 

Key Responsibilities:

  • Lead daily operations for all catering kitchens, ensuring efficient production, quality, and consistency across multiple event venues.
  • Oversee culinary execution for campus events ranging from VIP dinners and conferences to athletic events and large-scale functions.
  • Collaborate with the Director of Catering to develop seasonal menus, standardize recipes, and introduce innovative catering offerings.
  • Supervise, coach, and develop sous chefs, cooks, and utility associates while maintaining high culinary, safety, and sanitation standards.
  • Manage food production, presentation, inventory, ordering, and cost controls to achieve quality and financial goals.
  • Partner with catering managers and event teams to coordinate production schedules, accommodate client needs, and ensure flawless event execution.
  • Maintain compliance with HACCP, health department regulations, allergen protocols, and Bon Appétit food safety standards.
  • Resolve operational challenges proactively while fostering a culture of teamwork, accountability, and continuous improvement.

 

Preferred Qualifications:

  • Five or more years of progressive culinary leadership experience, including high-volume catering, banquet, or event production.
  • Completed education in Culinary Arts, Hospitality Management, or a related field preferred (or equivalent experience).
  • Strong experience with menu development, food costing, inventory management, and large-scale event execution.
  • Proven ability to lead and develop culinary teams in a fast-paced environment.
  • Knowledge of HACCP, food safety regulations, and sanitation best practices.
  • Excellent organizational, communication, and problem-solving skills.
  • ServSafe Certification preferred.
  • Flexibility to work evenings, weekends, and holidays based on the event schedule.
