Small Cheval, a part ofHogsalt , is looking for a Full Time Multi-Unit Director of Operations for Small Cheval (Salary negotiable + Quarterly target bonus) to join our team and oversee several of our quick-service locations!

Seeking a energetic, resilient individual with experience overseeing muti-unit restaurants!

Main Responsibilities: (not limited to the following):
  • Oversee the day-to-day operations of multiple Small Cheval locations ; this is a multi-unit position.
  • Understand, analyze, and interpret the P&L and determine necessary actions to drive the successful operation of the stores.
  • Support the Store Leaders in achieving the annual revenue and profitability goals by driving sales and profits in existing and new stores.
  • Monitor all stores’ financial reports; works with store leadership to make necessary adjustments.
  • Maintain and progress all areas of the Hogsalt food culture quality, consistency, executions, cleanliness and COG’s.
  • Hold the team accountable for the cleanliness of all aspects of the store including FOH, BOH, and exterior areas.
  • Oversee the store leaders to ensure they are operating at the highest level of day-to-day functions of the store and are responsible for the successful execution of all aspects of Small Cheval.
  • Assist in new all new store openings by supporting the store leadership to set up an efficient workflow and
  • Organization of the space:
    • Set pars and supporting store leadership to manage COG’s and labor
    • Assist in OS&E procurement for new store projects
    • Assist new store leaders as part of the opening team for successful new store openings
  • Maintain flexibility with any service-related restaurant assistance in the current stores, as needed, if not actively in a new store opening.
  • Oversee sourcing food products when Small Cheval specs are out-of-stock; maintain accurate order guides.
  • Direct and approve any and all kitchen and operational layout designs.
  • Review and approve any and all kitchen and operational equipment specifications.
  • Review and approve any and all custom fabrication drawings for kitchen equipment.
  • Review and approve any and all quotes for kitchen equipment.
  • Review and sign off on kitchen and bar installations.
  • Work with the Facilities & Maintenance team to coordinate ongoing repairs for all Small Cheval locations.
  • Review daily store leadership logs and coach leadership on problem solving and employee performance.
  • Must maintain the quality and consistency of all aspects of the service, culinary and beverage.
  • Ensure service, culture and leadership standards are met.
  • Support the other Director of Operations during PTO or extenuating circumstances.
  • Work closely with the Executive Team supporting and assisting day to day as well as in brand growth.
Qualifications:
  • 2-4 years of experience in a General Manager role within a quick-service environment.
  • 2-4 years of experience in a multi-unit hospitality environment.
  • Previous experience in a kitchen environment with Back-of-House duties (comfortably cooking, cleaning kitchen equipment, troubleshooting equipment etc.).
  • Fast casual quick service experience is a PLUS.
  • Bachelor's degree in business/hospitality or equivalent experience in hospitality.
  • Communicate any issues or concerns to the Executive Operations Director for Small Cheval.
  • Embody and represent the Hogsalt Service and Food Philosophy.
  • Lead by example and professionalism at all times and in all areas of Hogsalt and its affiliates.
